ARTICHOKES WITH CAVIAR SAUCE

Artichokes With Caviar Sauce image

Provided by Barbara Kafka

Categories     project, appetizer, side dish

Time 25m

Yield 2 servings

Number Of Ingredients 9

2 artichokes (10 ounces each)
1/2 fresh lemon
1/2 cup mayonnaise
1 tablespoon brandy
1 tablespoon water
2 teaspoons fresh lemon juice
Freshly ground black pepper to taste
1 ounce salmon roe
1 tablespoon snipped chives

Steps:

  • With a serrated knife, cut off the top 1 1/2 inches of each artichoke. Cut or break off the stems flush with the bottoms and remove the outer two rows of leaves. Rub cut surfaces with the lemon half as you work. Place the trimmed artichokes in a glass or ceramic dish large enough to hold them without touching. Cover tightly with microwave plastic wrap. Cook at 100 percent power in a high-power oven for 10 minutes. Prick plastic to release steam.
  • Remove from oven and uncover. Cover the dish with a damp cloth until artichokes are cool enough to handle. Push down on the leaves to make a flower shape and to expose the pale center leaves covering the fuzzy choke. Pull out the cone of center leaves, and with a small spoon, scrape out the choke. Allow to cool. Cover tightly, and refrigerate until ready to serve.
  • Whisk together the mayonnaise, brandy, water, lemon juice and pepper until smooth. Stir in salmon roe and chives. Refrigerate until cold.
  • Place each artichoke bottom on a plate. Spoon some of the sauce into the heart and around each artichoke, and serve.

STEAMED ARTICHOKES WITH TARRAGON BUTTER

Steamed Artichokes with Tarragon Butter image

Steaming is the classic way to cook globe artichokes. Their leaves become very tender and perfect for dipping one by one into melted butter (this one is flavored with fresh tarragon). The artichokes would also be delicious with Hollandaise Sauce (page 96), or crème fraîche and caviar.

Yield Serves 4

Number Of Ingredients 8

4 medium or large globe artichokes (about 2 pounds total)
1 sprig tarragon
Coarse salt
4 thin lemon slices
3/4 cup (1 1/2 sticks) unsalted butter
1 tablespoon finely chopped fresh tarragon leaves
Coarse salt
Lemon wedges

Steps:

  • Prepare artichokes Using a serrated knife, cut off top quarter of each artichoke. Use kitchen shears to trim sharp tips of artichoke leaves. Remove any small leaves from bottoms of artichokes and trim stems so artichokes can stand upright.
  • Prepare steamer Fill a large pot with about 2 inches of water and add a sprig of tarragon and a pinch of salt. Set steamer basket in pot (make sure water doesn't seep through holes). Bring to a boil, then reduce to a rapid simmer.
  • Steam artichokes Stand artichokes upright in steamer and season with salt. Top each with a lemon slice. Cover pot and steam until bottoms of artichokes are very tender when pierced to the center with the tip of a paring knife, 35 to 50 minutes. (Add more hot water if necessary to maintain level during cooking.)
  • Meanwhile, make butter Melt butter in a small saucepan over low heat, then stir in chopped tarragon and season with salt.
  • Serve Place an artichoke on each plate with some lemon wedges and serve warm tarragon butter on the side for dipping.

Categories     < 4 Hours

Time 2h

Yield 12 serving(s)

Number Of Ingredients 10

10 hard-boiled eggs
3/4 cup mayonnaise
1 small red onion, small dice
12 ounces cream cheese
16 ounces sour cream
1/2 cup fresh parsley
salt & pepper
2 (4 ounce) jars black caviar
2 (4 ounce) jars red caviar
1 (4 ounce) jar orange caviar

Steps:

  • Dice the hard boiled eggs. Stir in the mayonnaise and onions. Season mixture. In a greased springform pan, layer the egg mixture.
  • Beat the cream cheese and sour cream until smooth. Stir in the fresh parsley. Season mixture. Layer on top of egg mixture and smooth surface.
  • Chill for several hours or overnight.
  • Drain each color of caviar on separate paper towels.
  • Create a shape or design, using the different colors of caviar. Chill.
  • Be careful unmolding the springform pan.
  • Serve with toast points or crackers.

Tips:

  • Choose the right artichokes. Look for artichokes that are heavy for their size, with tightly closed leaves and no blemishes.
  • Prepare the artichokes properly. Trim the stem and remove the tough outer leaves. Cut the artichokes in half lengthwise and scoop out the fuzzy choke.
  • Cook the artichokes until tender. You can boil, steam, or roast the artichokes. Boiling is the most common method, but steaming or roasting will give the artichokes a more intense flavor.
  • Make the artichoke caviar. Once the artichokes are cooked, remove the leaves and scrape the flesh out of the center. Mash the artichoke flesh with a fork or food processor until it is smooth. Season the artichoke caviar to taste with lemon juice, olive oil, salt, and pepper.
  • Serve the artichoke caviar. Artichoke caviar can be served as a dip, spread, or garnish. It is also a great addition to salads, sandwiches, and pasta dishes.

Conclusion:

Artichoke caviar is a delicious and versatile dish that can be enjoyed in many different ways. It is a great way to use up leftover artichokes, and it is also a healthy and affordable appetizer or snack.
