Yield 8 to 10 servings

Number Of Ingredients 9

4 breakfast radishes, tender tops reserved if available
1/2 small head cauliflower or 1/4 large head
1 pomegranate
1 lemon, zested and juiced
Kosher salt and freshly ground black pepper
1/2 teaspoon granulated sugar
1/2 cup extra-virgin olive oil
8 ounces baby arugula
1/2 cup shaved Parmesan (shaved with a vegetable peeler)

  • When ready to serve, add the arugula (and radish tops if using) to the bowl with the dressing and toss gently to combine. Season to taste with salt and pepper. Add the shaved radishes and cauliflower and gently mix. Scatter the cheese over the top of the salad and serve immediately.

PAPAYA, JICAMA, AND AVOCADO SALAD

Papaya, Jicama, and Avocado Salad image

This chunky and crunchy salad is served more as a condiment than a separate course.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 8

1/4 cup fresh lime juice
2 tablespoons olive oil
1 teaspoon salt
1/8 teaspoon freshly ground pepper
1 ripe papaya (about 1 1/2 pounds), peeled, seeded, and cut into 1/2-inch dice
1 jicama (about 1 pound), skinned and cut into 1/2-inch dice
1 Hass avocado (about 12 ounces), ripe but firm
1/4 cup cilantro leaves, coarsely chopped

Steps:

  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper and set aside.
  • In a medium bowl, combine papaya and jicama. Cut avocado in half; remove pit and skin. Cut into 1/2-inch cubes and add to papaya and jicama. Add lime vinaigrette and toss well to combine. Add cilantro, adjust seasoning, and toss again.

Tips:

  • Prep Work: To save time, wash and dry the arugula, jicama, and papaya ahead of time. You can also toast the tortilla chips in advance for the croutons.
  • Choosing Ripe Avocado: Select avocados that are ripe but not too soft. They should yield to gentle pressure but not feel mushy.
  • Slicing Jicama: Use a sharp knife or mandoline to slice the jicama into thin matchsticks. This will help it blend well with the other ingredients.
  • Pomegranate Dressing: If you don't have pomegranate molasses, you can substitute balsamic vinegar or lemon juice. Adjust the amount of honey or maple syrup to taste.
  • Tortilla Chip Croutons: Use day-old tortilla chips for the croutons. This will help them stay crispy in the salad.

Conclusion:

This Arugula, Avocado, Papaya, and Jicama Salad with Pomegranate Dressing and Tortilla Chip Croutons is a delightful blend of flavors and textures. The peppery arugula, creamy avocado, sweet papaya, and crunchy jicama are complemented by the tangy pomegranate dressing and crispy tortilla chip croutons. This salad is perfect for a light lunch, a refreshing side dish, or a healthy snack.
