3 1/2 to 3 3/4 cups Gold Medal™ bread flour
1 teaspoon sugar
1 package regular active or fast-acting dry yeast (2 1/4 teaspoons)
1 1/4 cups very warm water (120°F to 130°F)
2 tablespoons olive or vegetable oil
2 teaspoons dried rosemary or thyme leaves, if desired
1 teaspoon salt
1 1/4 cups diced Asiago, Swiss or other firm cheese

Steps:

  • In large bowl, mix 1 1/2 cups of the flour, the sugar and yeast. Add warm water. Beat with whisk or electric mixer on low speed 1 minute, scraping bowl frequently. Cover tightly with plastic wrap; let stand about 1 hour or until bubbly.
  • Stir in oil, rosemary and salt. Stir in enough remaining flour, 1/2 cup at a time, until a soft, smooth dough forms. Let stand 15 minutes.
  • Place dough on lightly floured surface. Knead 5 to 10 minutes or until dough is smooth and springy. Knead in 1 cup of the cheese. Grease large bowl with shortening. Place dough in bowl, turning dough to grease all sides. Cover bowl tightly with plastic wrap and let rise in warm place 45 to 60 minutes or until dough has doubled in size. Dough is ready if indentation remains when touched.
  • Lightly grease uninsulated cookie sheet with shortening or cooking spray. Place dough on lightly floured surface. Gently shape into football-shaped loaf, about 12 inches long, by stretching sides of dough downward to make a smooth top. Place loaf with smooth side up on cookie sheet. Coat loaf generously with flour. Cover loosely with plastic wrap; let rise in warm place 45 to 60 minutes or until dough has almost doubled in size.
  • Place 8- or 9-inch square pan on bottom rack of oven; add hot water to pan until about 1/2 inch from the top. Heat oven to 450°F.
  • Spray loaf with cool water; sprinkle with flour. Using serrated knife, carefully cut 1/2-inch-deep slash lengthwise down center of loaf. Sprinkle remaining 1/4 cup cheese into slash.
  • Bake 10 minutes. Reduce oven temperature to 400°F. Bake 20 to 25 minutes longer or until loaf is deep golden and sounds hollow when tapped. Remove from cookie sheet to cooling rack; cool.

3/4 pound lean ground beef (90% lean)
1 shallot, finely chopped
2 large eggs
3/4 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup shredded part-skim mozzarella cheese
2/3 cup shredded Asiago cheese
1/3 cup oil-packed sun-dried tomatoes, coarsely chopped
1/4 cup coarsely chopped fresh basil
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
TOPPINGS:
2 tablespoons pine nuts, toasted
Thinly sliced fresh basil, optional

Steps:

  • Preheat oven to 400°. On a work surface, unroll crust; roll to a 12-in. circle. Press crust onto bottom and up sides of an ungreased 11-in. tart pan with removable bottom. Refrigerate while preparing filling., In a large skillet, cook beef and shallot over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles. 1 tablespoon Worcestershire sauce
½ cup buffalo wing sauce
1 teaspoon freshly ground black pepper
1 teaspoon sea salt

1 1/2 lbs mushrooms
1 tablespoon butter
1/2 cup onion, minced
2 garlic cloves, minced
2 teaspoons fresh thyme, chopped
1 pinch salt and pepper
1 1/2 cups whipping cream
2 large eggs
1 cup asiago cheese, grated
48 miniature tart shells

Steps:

  • Chop mushrooms in a food processor until finely minced.
  • In a large saute pan over medium heat melt butter add mushrooms and onions.Cook stirring often until mushrooms are soft and all the liquid has evaporated.
  • Stir in garlic and thyme and cook 1 minute longer.
  • Remove from heat and season to taste. allow to cool.
  • Preheat oven to 375.
  • Whisk eggs and cream together and add to cooled mushroom mixture.
  • Spoon mushroom filling into tart shells and top with Asiago cheese.
  • Bake for 12 to 15 minutes, until pastry is browned and filling puffs up a little.

I got this recipe from a local winery where my husband and I celebrated our 1st anniversary. I have made some variations and just love this tart. I serve it with a salad and of course a glass of crisp white wine!

4 sheets phyllo dough
2 -4 tablespoons melted butter
2 peaches, peeled
4 ounces balsamic vinegar (12 years or older)
8 ounces grated asiago cheese

Steps:

  • Cut peeled peaches in half and marinate in the balsamic vinegar for 30 minutes. (If you don't have aged balsamic, pour double the amount of balsamic in a sauce pot and reduce by half over low heat).
  • Take a sheet of phyllo and brush with melted butter, repeat until all sheets have been layered and buttered.
  • Cut the phyllo into 4 sections.
  • Cut marnited peach halves into slices and place onto phyllo sections (using a 1/2 peach for each section).
  • Divide asiago evenly over the peaches.
  • Fold phyllo and brush with butter.
  • Bake at 350 for 20 minutes, until golden and crispy.
  • I triple this recipe and freeze just before I bake. It's a great treat in the middle of winter when you want it to be summer! I have also tried canned peaches and it doesn't work out well.
