Substantial, nutty noodles meet their match in a spirited Sicilian-style sauce.

Number Of Ingredients 10

8 ounces hearty pasta, such as spelt, farro, or whole grain
3 tablespoons extra-virgin olive oil
5 cloves garlic, minced (about 1 tbsp.)
5 anchovies, minced (about 2 1/2 tsp.)
2/3 cup golden raisins, coarsely chopped
1/2 cup toasted pine nuts
1/2 cup (about 1 oz.) grated pecorino
Kosher salt and freshly ground pepper
1/2 cup part-skim ricotta cheese
1/2 head radicchio, cored and very thinly shredded (about 2 cups)

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook, stirring occasionally, until al dente.
  • While pasta is cooking, heat oil in a large, straight-sided skillet over medium-high heat. Add garlic, anchovies, and raisins, and cook until fragrant, about 2 minutes. Stir in pine nuts.
  • Drain pasta, reserving 1/2 cup pasta water. Add pasta to the pan, and stir to combine. Moisten with pasta water as necessary. Stir in half the pecorino, and season with salt and pepper to taste.
  • Divide pasta between 4 plates, and top each with a dollop of ricotta, a handful of radicchio, and a sprinkling of the remaining pecorino.

This fancy version of mac and cheese is rich, creamy, and the perfect comfort food! Don't omit the radicchio as its slight bitterness balances out the richness of this dish.

1 (16 ounce) package shell pasta
2 tablespoons olive oil
1 pound sliced cremini mushrooms
1 small red onion, diced
salt and ground black pepper to taste
1 large head radicchio - halved, cored, and thinly sliced
4 cloves garlic, minced
2 tablespoons minced fresh sage
¼ cup butter
¼ cup all-purpose flour
2 cups milk
3 cups grated Asiago cheese
1 ½ cups heavy whipping cream
1 ½ cups freshly grated Parmigiano-Reggiano cheese, divided
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup panko bread crumbs

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook shell pasta in the boiling water, stirring occasionally until still firm to the bite, about 9 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Heat olive oil in a large pot over medium heat. Add mushrooms, onion, and salt and pepper to taste. Cook and stir until mushrooms have browned and onion is translucent, about 7 minutes. Add radicchio, garlic, and sage; cook until radicchio has wilted and garlic is fragrant, about 3 minutes. Remove from heat and stir in pasta.
  • Melt butter in a saucepan over medium-high heat. Whisk in flour; cook until foaming. Pour in milk, whisking constantly, until mixture comes to a boil and thickens, about 5 minutes. Remove from heat; whisk in Asiago cheese, heavy cream, 1 cup Parmigiano-Reggiano cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until sauce is melted and smooth.
  • Pour sauce over pasta mixture; stir until thoroughly combined. Transfer to prepared baking dish. Top with remaining 1/2 cup Parmigiano-Reggiano cheese and panko.
  • Bake in the preheated oven until bubbly, about 30 minutes. Broil until topping is golden brown, about 1 minute.

One of my close-but-not-quite recipe ideas from RSC #11. A nice, family pasta dish with a creamy sauce. Use it as a meatless meal or pair it with a robustly-flavored meat.

1 lb rotini pasta
1 (12 ounce) jar marinated artichoke hearts
2 tablespoons extra virgin olive oil
2 teaspoons minced garlic
1/2 onion, finely chopped
1/2 teaspoon dried basil
1/2 cup dry white wine
1 1/2 cups milk
1/4 cup all-purpose flour
1/2 cup asiago cheese
2 tablespoons fresh parsley, chopped
salt and pepper
1/2 teaspoon cayenne chili pepper flakes (optional)
additional parsley (to garnish)

Steps:

  • Cook rotini according to package directions. Keep hot.
  • Drain and chop artichoke hearts.
  • In a large skillet, sauté onion and garlic gently in the olive oil until onion starts to soften.
  • Add artichokes. Heat gently, stirring often.
  • Add basil and white wine.
  • Shake the milk and flour together. Add to pan. Heat, stirring constantly, until simmering and thickened.
  • Stir in Asiago and parsley. Taste and adjust seasonings.
  • Toss pasta in sauce until well-coated. Serve sprinkled with cayenne pepper flakes and additional parsley.

1 (16 ounce) package penne pasta
2 1/4 cups heavy cream, divided
1 chicken bouillon cube, crumbled
3/4 cup grated asiago cheese
1/2 tablespoon cornstarch
2 tablespoons butter
1/4 cup chopped prosciutto (optional)
1 large tomatoes, diced
2 chopped fresh garlic cloves
3/4 cup sliced mushrooms
1/2 tablespoon parsley flakes

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente. Drain, and set aside.
  • In a medium saucepan, bring 2 cups cream to a simmer, stirring often. Whisk in bouillon and cheese until well blended and bouillon has dissolved completely. Dissolve cornstarch in 2 tablespoons water, and whisk into mixture. Cook and stir till the cream thickens, then remove from heat and set aside.
  • Melt butter in a medium skillet over medium high heat. Stir in prosciutto, garlic, and mushrooms and cook until mushrooms are tender, about 3 minutes. Add remaining 1/4 cup cream and parsley flakes. Heat through.
  • To serve, place pasta in a large mixing or serving bowl. Add the mushroom mixture and pour in cream sauce. Toss well, and serve.
