Yield 4 serving(s)

Number Of Ingredients 12

2 large garlic cloves, chopped
1/3 cup chopped green onion
2 tablespoons soy sauce
1 tablespoon chinese rice wine or 1 tablespoon dry sherry
1 (2 cm) cube peeled fresh ginger, chopped
2 teaspoons sugar
1 teaspoon sesame oil
3/4 teaspoon chili-garlic sauce
4 (170 g) center-cut skinless salmon fillets
1 tablespoon olive oil
1 large bok choy, cut crosswise into 1/2-inch-wide strips (about 7 cups)
115 g mushrooms, sliced

Steps:

  • To make marinade, combine first 8 ingredients in a bowl. Arrange salmon in a glass baking dish spoon marinade on top and let it marinade for 5 minutes.
  • Preheat oven to 500°F, (260°c). Arrange fish, with some marinade still clinging, on rimmed baking sheet. Transfer any extra marinade in the dish to small saucepan. Roast fish until cooked through, about 8 minutes. Bring marinade in saucepan to boil; set aside and reserve for glaze.
  • Meanwhile, heat oil in large non stick skillet over high heat. Add bok choy and mushrooms. Stir-fry until mushrooms are tender and bok choy is wilted, about 4 minutes. Season with salt and pepper.
  • Divide vegetables among plates. Top with salmon. Brush fish with glaze.

Provided by jlauer

Number Of Ingredients 18

•8 1/3-inch-thick rounds red onion
•8 large shiitake mushrooms, stemmed
•8 red radishes, trimmed, halved
•4 baby bok choy, halved lengthwise
•1 large orange bell pepper, cut lengthwise into 8 strips
•1 1/4 cups Mango-Sesame Dressing (see below), divided
•6 boneless chicken breast halves with skin
•Nonstick vegetable oil spray
------- Mango-Sesame dressing
•3/4 cup vegetable oil
•3/4 cup Major Grey's mango chutney
•6 tablespoons unseasoned rice vinegar
•3 large garlic cloves, peeled
•6 3/4 teaspoons soy sauce
•1 1/2 tablespoons Asian sesame oil
•1 1/2 teaspoons Dijon mustard
•1 1/2 teaspoons dried crushed red pepper
Combine all ingredients in blender. Cover tightly; blend until dressing is smooth. Season to taste with salt and pepper. Cover and chill.

Steps:

  • •Arrange all vegetables on large rimmed baking sheet. Brush vegetables lightly on both sides with 1/3 cup Mango-Sesame Dressing; sprinkle with salt and pepper. •Arrange chicken on sheet of foil. Brush both sides of chicken with 1/3 cup dressing, then sprinkle with salt and pepper. DO AHEAD Vegetables and chicken can be prepared 2 hours ahead. Let stand at room temperature. •Coat grill rack generously with nonstick spray and prepare barbecue (medium-high heat). Grill vegetables until just tender, turning occasionally, about 8 minutes for onion rounds and 4 minutes for mushrooms, radishes, bok choy, and pepper strips. Return all vegetables to same baking sheet. •Grill chicken until cooked through, 5 to 6 minutes per side. Transfer chicken to cutting board. Let stand 5 to 10 minutes. •Arrange chicken breasts and vegetables on platter. Serve with remaining dressing.

Tips:

  • Use fresh ingredients: Fresh bok choy and mushrooms will give you the best flavor and texture.
  • Choose the right type of mushrooms: Shiitake, oyster, and cremini mushrooms are all good choices for this recipe.
  • Wash the bok choy and mushrooms thoroughly: This will help to remove any dirt or grit.
  • Slice the bok choy and mushrooms thinly: This will help them to cook evenly.
  • Use a large skillet or wok: This will give you plenty of room to stir-fry the vegetables.
  • Heat the oil over high heat: This will help to prevent the vegetables from sticking to the pan.
  • Stir-fry the vegetables in batches: This will help to prevent them from overcrowding the pan and steaming instead of frying.
  • Add the sauce ingredients towards the end of cooking: This will help to prevent them from burning.
  • Serve the stir-fry immediately: This is when it is at its best.

Conclusion:

This Asian bok choy and mushrooms recipe is a quick, easy, and delicious way to get your daily dose of vegetables. It is also a great way to use up any leftover vegetables you have on hand. With its simple ingredients and easy-to-follow instructions, this recipe is perfect for busy weeknight meals.
