Steps:

  • Halve tofu lengthwise, then cut crosswise into 1/2-inch-thick slices and pat dry well. Put 1 tablespoon soy sauce in a wide shallow dish, then add tofu, turning to coat, and let stand 10 minutes. Pat tofu dry.
  • Heat oil in a 12-inch heavy skillet over high heat until hot but not smoking, then add tofu in 1 layer and cook, turning over once, until tofu is browned, about 6 minutes total. Transfer with a slotted spoon to a large plate, reserving oil in skillet.
  • Add garlic, ginger, and red pepper flakes to skillet and sauté, stirring, until fragrant, about 30 seconds. Add beans, bell pepper, and salt and sauté, stirring, 1 minute.

2 cups vegetable oil for frying
1 pound fresh green beans, trimmed and dried well with paper towels
1 tablespoon vegetable oil
3 cloves garlic, minced
2 teaspoons minced fresh ginger root
2 green onions, minced
½ pound ground pork
2 tablespoons Asian chili garlic sauce
¼ cup chicken broth
2 teaspoons soy sauce
2 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • Heat 2 cups of vegetable oil in a large wok or deep sided skillet to 375 degrees F (190 degrees C). Carefully add the beans to the hot oil, and fry, stirring occasionally, until the beans are blistered, 3 to 5 minutes. Dip the beans out of the oil with a strainer, and quickly rinse them in cold water.
  • Remove the oil from the wok, but do not wipe the pan. Heat 1 tablespoon of vegetable oil in the wok over medium heat, and stir in the garlic, ginger, and green onion. Cook and stir until fragrant, about 30 seconds, and stir in the ground pork. Cook and stir the pork, breaking it up as it cooks, until no longer pink, about 4 minutes. Stir in the chili garlic sauce, chicken broth, and soy sauce, and bring to a boil.
  • Mix the cornstarch with the water in a small bowl, stir into the pork mixture, and let simmer until the sauce thickens, 1 to 2 minutes. Gently stir the green beans into the pork sauce, heat through, and serve.

Steps:

  • Preheat oven to 450°F. Place first 5 ingredients, 3 tablespoons safflower oil, 1 teaspoon sesame oil, and 1 teaspoon soy sauce in processor; puree. Season sauce to taste with salt.
  • Place fish, beans, and mushrooms in single layer on rimmed baking sheet. Whisk remaining 2 tablespoons safflower oil, 1 teaspoon sesame oil, and 2 teaspoons soy sauce in bowl to blend. WOK OR SKILLET ASIAN-STYLE FRESH GREEN BEANS

To save some time cook the green beans ahead, place in a zippered plastic bag and refrigerate until ready to use. Make certain to pat the green beans dry using a paper towel before sautéing them. If you like spicy like my family does add in 1-2 teaspoons dried chili flakes when sautéing the garlic. Just to let you know, I tried this recipe using Green Giant brand frozen whole beans and it was not as successful as using the fresh beans. Prep time does not include boiling the beans. This is a really great recipe for fresh summer green beans!

  • Cook the green beans in a pot of boiling salted water until JUST crisp-tender (about 3 minutes) plunge into an ice water bath to cool completely.

  • Add in beans and stir-fry for about 2 minutes.

Seared Ahi Over Asian Green Beans and Carrots image

2 medium ahi tuna steaks (fresh or thawed from frozen)
2 Tbsp sesame seeds
1/2 lb fresh green beans
3 large fresh carrots
2 Tbsp chopped garlic
1/4 c teriyaki sauce
pinch pepper
pinch crushed pepper flakes
2-3 Tbsp butter
2 Tbsp honey

Steps:

  • 1. To start, rinse and peel the carrots and trim the ends off the green beans. Then with the same peeler, continue to peel the carrot while rotating to create noodle looking carrot strings. --You won't use the whole carrot, just peel until it gets too small to make nice looking strings.
  • 2. In a large saute pan, heat the butter and garlic on medium/high until it sizzles, then add the vegetables an- toss with tongs and cover.
  • 3. After about 2 minutes, add about 5-10 grinds of fresh black pepper and a pinch of crushed pepper flakes and return the cover.
  • 4. While waiting on the veggies, coat the Ahi steaks in sesame seeds and some pepper. Also heat a skillet to medium/high
  • 5. After a few minutes more have gone by, add the teriyaki sauce and honey into the pan, toss and lower heat to medium.
  • 6. Note: Depending on how crunchy you like your veggies, this side could be done right now. If you like them a little more soft then just cover for an additional 5-8 minutes on medium/low.
  • 7. Place the Ahi steaks in the hot hot skillet and sear top and bottom for about 45 seconds to a minute. If the fish is very thick I like to sear the sides too.
  • 8. With a very sharp knife, slice the Ahi to about 1/4 inch pieces and lay on top of the veggies to plate. Dish should be eaten right away
