ASIAN GROUND BEEF CASSEROLE

Asian Ground Beef Casserole image

This is from a recipe that was in a cookbook given to my Grandma when she retired from "Ore Ida" a potato processing plant in Burley, Idaho. Her co-workers put this book together because they knew her love of cooking and wanted to share their favorite recipes....I've made this often and sometime I add my own goodies to it like mushrooms, bamboo shoots, celery or anything else that sounds good in my pantry. If you add extras you may need to adjust the cooking time. I really recieved my love of cooking from my Grandma and I try about any recipe just to try it....I hope you do the same. Not sure about yield or serving size I come from a group of hungary men.

CHINESE-STYLE BRAISED BEEF ONE-POT

Chinese-style braised beef one-pot image

Great for casual entertaining, when you fancy a warming beef stew but with some more vibrant flavours

Provided by Jane Hornby

Categories     Dinner, Main course

Time 2h40m

Number Of Ingredients 14

3-4 tbsp olive oil
6 garlic cloves, thinly sliced
good thumb-size piece fresh root ginger, peeled and shredded
1 bunch spring onions, sliced
1 red chilli, deseeded and thinly sliced
1 ½kg braising beef, cut into large pieces (we used ox cheek)
2 tbsp plain flour, well seasoned
1 tsp Chinese five-spice powder
2 star anise (optional)
2 tsp light muscovado sugar (or use whatever you've got)
3 tbsp Chinese cooking wine or dry sherry
3 tbsp dark soy sauce, plus more to serve
500ml beef stock (we used Knorr Touch of Taste)
steamed bok choi and steamed basmati rice, to serve

Steps:

  • Heat 2 tbsp of the oil in a large, shallow casserole. Fry the garlic, ginger, onions and chilli for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding the final tbsp oil if you need to. It should take about 5 mins to brown each batch properly.
  • Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant. Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 150C/fan 130C/gas 2.
  • Pour in the soy and stock (it won't cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 1½-2 hrs, stirring the meat halfway through. The meat should be very soft, and any sinewy bits should have melted away. Season with more soy. This can now be chilled and frozen for up to 1 month.
  • Nestle the cooked bok choi into the pan, then bring to the table with the basmati rice straight away and tuck in.

Tips:

  • Choose the right ground beef: For the best flavor and texture, use 80/20 ground beef. This means that the beef contains 80% lean meat and 20% fat. If you use leaner ground beef, the casserole may be dry.
  • Brown the ground beef thoroughly: Browning the ground beef adds flavor and helps to remove excess fat. Be sure to brown the beef in a large skillet over medium-high heat until it is no longer pink.
  • Use a variety of vegetables: This recipe calls for a variety of vegetables, including carrots, celery, onions, and peas. You can also add other vegetables that you like, such as broccoli, cauliflower, or zucchini.
  • Use a flavorful broth: The broth that you use in this recipe will add a lot of flavor to the casserole. Be sure to use a broth that you like the taste of. If you don't have any broth on hand, you can use water instead.
  • Season the casserole well: This recipe calls for a variety of seasonings, including salt, pepper, garlic powder, and onion powder. You can also add other seasonings that you like, such as paprika, chili powder, or cumin.
  • Cook the casserole until the vegetables are tender: The casserole should be cooked until the vegetables are tender but still have a little bit of bite to them. This will usually take about 30 minutes.
  • Serve the casserole hot: This casserole is best served hot out of the oven. You can garnish it with fresh parsley or cilantro before serving.

Conclusion:

This Asian ground beef casserole is a delicious and easy-to-make meal that is perfect for a weeknight dinner. It is packed with flavor and vegetables, and it is sure to be a hit with the whole family.
