250 g red lentils
500 ml vegetable stock
1 tsp vegetable oil
1 small onion (finely chopped)
1 clove garlic (chopped)
1 - 1½ cups chopped mixed vegetables (peppers, spring onions, courgettes, peas, corn, carrots etc.)
1 egg (beaten)

salt and pepper (and other spices to taste)

Steps:

  • Place the lentils and stock in a saucepan. Gently simmer until the liquid has been absorbed and the lentils are soft. Strain in a sieve and stand to allow excess liquid to drain well.
  • While the lentils are cooking, fry uncooked vegetables until they are starting to soften and turn golden.
  • Place the lentils, cooked vegetables (add any grated root vegetables at this stage) and egg into a bowl and mix. Season well with some herbs, spices and salt and pepper.

½ pound ground pork
3 slices bread, broken up into small pieces
2 eggs, lightly beaten
1 small onion, finely chopped

1 onion, chopped
2 garlic cloves, minced

1/2 small yellow onion, finely diced
1 carrot, finely diced

2 Yukon gold potatoes, finely diced

1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon crushed red chile flakes
2 1/2 cups vegetable stock
1 tablespoon tamari or soy sauce
2 teaspoons poultry seasoning

2/3 sleeve saltine crackers, crushed
5 eggs, lightly beaten
1/2 cup shredded Cheddar

Steps:

  • Preheat the oven to 350 degrees F. Oil a large loaf pan and line with parchment paper, then set aside.
  • Soak the lentils in hot water while you prep the vegetables. Pour the vegetable oil into a large saucepot on medium heat. Add the onion, carrot, celery and potatoes. Add the granulated garlic, salt, pepper and chile flakes. Saute until the vegetables begin to soften, stirring frequently. Drain the lentils, and add to the pot along with the vegetable stock.
