Yield 4 servings

Number Of Ingredients 29

1/2 tablespoon szechwan peppercorns
1 tablespoon black peppercorns
2 star anise
32 ounces water (4 cups)
1/3 cup kosher salt
1/3 cup sugar
1 tablespoon dark soy sauce
4 large slices ginger
2 bay leaves
1 pork loin, cleaned (about 3 to 4 pounds)
Black pepper to taste
Garnish: 1/4 cup chive batons
2 tablespoons chile oil
Gingered Yams, recipe follows
Five Spice Apples, recipe follows
1 1/2 cups heavy cream
2 tablespoons minced ginger
4 medium sized yams, peeled and quartered
6 garlic cloves, peeled
2 to 4 ounces of butter
Salt and black pepper to taste
Canola oil to cook
1 small diced red onion
1/2 tablespoon five spice powder
1 tablespoon brown sugar
2 Granny Smith apples, peeled and diced
8 ounces apple juice
1 tablespoon butter (optional)
Salt and black pepper to taste

Steps:

  • Toast both peppercorns and anise until fragrant in a saute pan. Mix everything together and taste. The liquid should be tasty, but not overly salty. Place pork in brine overnight. After brining, thoroughly rinse pork in cold water. Season the pork with black pepper and saute in well oiled pan. Color both sides then place in a 375 degree oven for 15 to 20 minutes. The middle of the pork should get hot. Note: even when fully cooked, the meat will remain pink because of the brining process. Let loin rest for 10 minutes then slice. Place pork around a mound of yams. Garnish with apples, chive batons and chile oil. Optional garnish for the adventuresome would be fried yam chips.
  • Place cream and ginger in saucepan and on low heat, reduce the cream to 1 cup. In another saucepan, place yams and garlic and completely cover with cold water. Place on stove at medium heat and slowly boil. Cook about 20 to 30 minutes or until yams can be pierced with a paring knife then easily fall off of the knife. Strain well and place in food processor. Puree and add cream, butter, salt and pepper. Check for seasoning. Keep warm for serving.
  • In a saute pan, coat with oil and caramelize onions. Add five spice, sugar and apples. Deglaze with juice and season. Let mixture cook and reduce by 50 percent. The apples should remain intact and have some liquid left. Stir in the butter. Check for seasoning. Do not overcook apples to mash. This can be done in advance and reheated for plating.

ASIAN MARINATED PORK CHOPS

Asian Marinated Pork Chops image

This is one of my favorite marinades to use for grilled pork chops. I usually just throw ingredients as I see fit, so the measurements are estimates. The roasted red chili paste can be found in the Asian section of your grocery store.

Yield 6

Number Of Ingredients 7

1 cup soy sauce
½ cup brown sugar
2 cloves garlic, crushed
1 tablespoon ground ginger
1 tablespoon ground cumin
1 tablespoon roasted red chili paste
6 (1-inch thick) pork chops

Steps:

  • Place the soy sauce, brown sugar, garlic, ginger, cumin, and chili paste in a large, heavy plastic zipper bag. Smush the bag a few times with your fingers to mix all the ingredients thoroughly and dissolve the brown sugar; place the pork chops into the marinade, and seal the bag. Allow to marinate for 30 to 45 minutes.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the pork chops from the marinade, and discard the marinade. Shake off excess marinade, and grill the pork chops until browned, the meat is no longer pink inside, and the chops show good grill marks, 5 to 7 minutes per side. An instant-read meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F (63 degrees C).

The marinade not only adds a depth of flavors but also helps to keep the meat moist and flavorful during cooking. - Gingersnap-Crusted Potatoes: The recipe introduces a unique and delightful side dish. The crispy gingersnap crust adds a sweet and spicy touch to the roasted baby red skin or Yukon Gold Potatoes. - Spiked Apples: The recipe incorporates a delightful accompaniment of spiced apples. The apples are sautéed in butter and brown sugar, creating a sweet and tangy glaze. The addition of cinnamon, nutmeg, and ginger enhances the flavors, making the apples an irresistible side dish. ### Cooking and Serving - Pan-Seared Pork Loin: The marinated Pork Loin is pan-seared to achieve a golden crust. This technique ensures that the meat is juicy on the inside and crispy on the outside. - Ro roasted Potatoes: The Gingersnap-Crusted Potatoes are roasted in the same skillet used for searing the Pork Loin. This allows the flavors from the meat to infuse into the roasted Potatoes. - Sautéed Apples: The Spiked Apples are quickly sautéed in butter until they are glazed and slightly caramelizing. This step adds a touch of sweetness and a delightful aroma to the dish. ### Serving Suggestions - Presentation: When assembling the dish, place the sliced Pork Loin in the center of the plate, arrange the Gingersnap-Crusted Potatoes around it, and top with the Spiked Apples. - Garnish: For an extra touch of color and freshness, garnish with sprigs of parsley or rosemary. - Accompaniments: Serve the dish with your favorite sides, such as steamed broccoli, roasted Brussel sprouts, or a simple green Salad. ### Recipe Variations - Spice Adjustments: Adapt the recipe according to your spice level. If you prefer a milder dish, reduce the amount of Chinese five-spice or cayenne Pepper. - Alternative Cooking Methods: While the recipe calls for pan-searing and roasting, you can also bake the Pork Loin in the Oven and roast the Potatoes. - Seasonal Sides: Feel free to incorporate seasonal produce as sides. For example, in the fall, you could prepare roasted butternut squash or sautéed spinach. ### Final Notes The Marinated Pork Loin with Gingersnap-Crusted Potatoes and Spiked Apples is a delectable main course that offers a plethora of flavors. The sweet, tangy, and spicy elements come together beautifully, creating a memorable dish.
