EASY POT STICKER SOUP

Easy Pot Sticker Soup image

Since my husband and I have soup often, I'm always coming up with something new. I saw pot stickers in the freezer and decided to feature them in an Asian soup. The results were delicious. Rice vinegar provides just the right tang, and the green onions and carrots add color. Stir in chopped cabbage or bok choy if you'd like. A little sesame oil goes a long way, but you can always add a bit more. -Darlene Brenden, Salem, Oregon

Ready-made Chinese and Japanese dumplings can be found in the frozen sections of many stores, and can be bought with different fillings, including the pork variety used here. Simmering them in a flavorful broth that comes together quickly will get a comforting dinner on the table in a flash.

LING LING POT STICKER SOUP

Ling Ling Pot Sticker Soup image

This yummy soup uses Ling Ling brand frozen pot stickers that I buy from Costco. Instead of frozen veggies, I use fresh ones and add water chestnuts and bamboo shoots. If using fresh....it will depend on how crisp you like them...as to when you add them to the soup to cook). This is something my teenage boys really like!

2 tablespoons grated fresh ginger

  • Add the sauce mixture to the soup and bring to a simmer. Season with salt and pepper. Garnish with a few more scallions.

Tips:

  • Choose the right wrappers: For the best results, use wonton wrappers that are thin and pliable. If you can, find wrappers that are specifically labeled for soup dumplings.
  • Fill the dumplings generously: Don't be shy with the filling! The more filling you use, the more flavorful your dumplings will be. Be sure to distribute the filling evenly so that each dumpling has a good amount of meat, vegetables, and broth.
  • Seal the dumplings tightly: Make sure to seal the dumplings tightly so that the broth doesn't leak out during cooking. You can use a fork or your fingers to crimp the edges of the dumplings.
  • Cook the dumplings in a flavorful broth: The broth is an important part of this soup, so make sure to use a flavorful one. You can use chicken broth, vegetable broth, or even water. If you're using water, be sure to add some salt and pepper to taste.
  • Serve the soup immediately: Once the dumplings are cooked, serve the soup immediately. This will prevent the dumplings from becoming soggy.
