1 x avocado halved, pitted, peeled, and diced

Steps:

  • * Note: Available in the Asian foods section of some supermarkets. Prepare barbecue (medium-high heat). Brush corn all over with 1 1/2 tsp. sesame oil. Grill till corn is tender and brown in spots, turning frequently, about 10 min. Cold. Cut corn kernels off cobs. Mix vinegar, green onions, sesame seeds, chili paste, garlic, and remaining 1 1/2 tsp. oil in medium bowl. Add in corn and avocado; toss gently to combine. Season salsa to taste with salt and pepper. 2 russet potatoes, sliced 1/8 inch thick on a mandoline or by hand with a sharp knife
Olive oil, for brushing
Kosher salt and freshly ground black pepper
1 1/2 teaspoons chili powder
4 teaspoons soy sauce
1 tablespoon toasted sesame oil
1 teaspoon grated fresh ginger
Juice of 1 lime
Sriracha or other hot sauce, as desired
4 avocados, chopped
1/2 bunch fresh cilantro, chopped
Toasted sesame seeds, for topping

Steps:

  • For the homemade chili potato chips: Preheat the oven to 450 degrees F. Line 2 baking sheets with parchment.
  • Distribute the potatoes between the prepared baking sheets in one layer.
