1 large sweet potato, peeled and cut int 1 inch chunks (garnet yam)
1 1/2 tablespoons soy sauce, plus more for dipping
2 teaspoons toasted sesame oil
1 medium shallot, minced
1 garlic clove, minced
2 tablespoons finely chopped cilantro or 2 tablespoons chives
1/2 inch ginger, peeled and grated
30 small round wonton skins
vegetable oil or coconut oil, for frying

Steps:

  • Cook sweet potato chunks in a covered pot of boiling water until very tender, about 8 minutes. Drain and rinse until cool to the touch. Transfer sweet potato to a mixing bowl.
  • Use the back of a fork to mash the sweet potato until mostly smooth. Add the soy sauce, sesame oil, shallot, garlic, cilantro or chives, and ginger, and stir well.
  • To assemble the dumplings, brush the edges of a won ton skin lightly with water (use a clean finger or a small pastry brush). Place about a teaspoon of the sweet potato mixture in the center of the wrapper. Fold the wrapper in half and make 5-6 small pleats as you seal the wrapper together, pinching gently to ensure total closure. Repeat with the remaining filling and wrappers, until all the dumplings are made.
  • To cook the dumplings, heat 2 tbsp of oil in a large non-stick frying pan (make sure it has a fitted lid and set it near the stove), over medium heat. Working in batches, arrange the dumplings close to one another (but not touching) in the pan) and let cook for 2-3 minutes, until a golden crust begins to develop on the bottom. Flip the dumplings, and cook on the other side for 1-2 minutes, until a crust develops.
  • Carefully pour about 3 tbsp water over the dumplings, then cover the pan quickly and let steam for about 3 minutes.
  • Remove the lid and let the dumplings aerate until the excess water is cooked away and the bottoms become crisp again.
  • Transfer the cooked dumplings to a serving platter, repeat with the remaining uncooked dumplings, then serve immediately, with soy sauce (or your favorite asian sauce) for dipping.

Not spicy despite the chili powder, but add more if you like things hotter. These are not very crispy like regular fries, but still made a nice side dish.

Steps:

  • Begin by peeling and dicing sweet potatoes. Bring a large pot of salted water to a boil over high heat. Add the potatoes, reduce heat and cook until just tender but still have a little bite. Drain and place in a bowl to cool.

1/2 cup finely shredded red cabbage
1/2 cup shredded carrots
1/4 cup rice wine vinegar
1 teaspoon sugar
1 fresh lime, juiced
1/4 teaspoon ground ginger
1/4 teaspoon salt
2 large sweet potatoes
4 tablespoons canola oil, plus more for sauteing
2 (8-ounce) tempeh cakes
2 cups water
1 cup lite soy sauce
1 cup barbecue sauce
1 large onion, thinly sliced

Steps:

  • Asian Slaw: Combine green cabbage, red cabbage, and carrots and toss in a medium serving bowl. Whisk together rice wine vinegar, sugar, lime juice, ground ginger, and salt and pour over salad mixture. Toss and chill until serving.

  • Caramelized Onions: In a medium non-stick skillet, heat canola oil over medium-high heat and add sliced onion. Saute onion until translucent, add the brown sugar, and continue cooking another 1 to 2 minutes. Remove from heat.

I roasted the potatoes and steamed the pears early in the day and left things on simmer until I had time to focus. This recipe can be adapted for vegetarians or vegans by using vegetable stock and replacing the cream with a dairy alternative or the water used to steam the pears.

2 -3 lbs sweet potatoes
3 Asian pears
2 tablespoons oil
1 large sweet onion, chopped
4 garlic cloves, peeled and minced
1 inch fresh ginger, peeled and minced
1 small hot chili pepper, pit and seeds removed, minced
32 ounces chicken stock
15 ounces unsweetened coconut milk
8 ounces light cream
1 cup cilantro leaf
1 cup coconut flakes, for garnish
hot sauce

Steps:

  • Preheat oven to 400°. Roast scrubbed potatoes on a foil lined cooking sheet until fork tender, about 1 hour. Remove from heat, wrap loosely in foil and allow to cool. Set aside.
  • Quarter and core two of the pears, reserving the third. Place in a steaming basket over a small amount of simmering water, cover, and cook 15 minutes. Remove from heat, covered, and allow to cool.
  • Heat the oil over medium low heat in a generous soup pot. Add onion, garlic, ginger, and chile and cook until tender, stirring occasionally. Season with salt and pepper.
  • Pare the cooked, cooled potato, cut into chunks, and add to the pot.

For the lamb shanks
1 tbsp vegetable oil
2 lamb shanks
2 shallots
50g shitake mushrooms
1 inch knob of ginger, peeled
4 garlic cloves
2 small red chillies (medium spicy)
1 tbsp balsamic vinegar
1 tbsp soft brown sugar
1 lemongrass stalk
500ml stock (beef is fine)
2 tbsp soy sauce
1 tsp Chinese five spice powder
1 tbsp fish sauce
Juice 1 lime
For the sweet potato mash
350g sweet potatoes
20g butter
1 small red chilli
Small bunch fresh coriander
2 tbsp milk
Salt and pepper
A couple of handfuls of pak choi

Steps:

  • 1. Heat oven to 170C. 2. First, prepare the condiment vegetables: remove the outer stalks of the lemongrass. No need to chop but bruise. Peel and halve the shallots. Cut the chilli in half lengthways and deseed. Cut the ginger in half. Trim the stalks of the mushrooms and leave whole. 3. Then seal the meat. Firstly, season the lamb with salt and pepper. Then heat the vegetable oil in a casserole dish and fry the lamb shanks for 2-3 minutes, turning regularly until browned all over. 4. Remove the lamb and add the onions, garlic, chilli and mushrooms. Fry them for about 1min. Then add the five spice powder and stir again for about 30 seconds. Then add the soy, fish sauce, lime juice, balsamic vinegar and sugar. Heat gently, stirring constantly for another minute or so. Finally add the stock, ginger and lemongrass. 5. Put the lamb back in, cover the casserole with a lid and cook in the oven for 2 hours, until the lamb is really tender, almost falling off the bone. 6. While you're waiting for the lamb, start on the mash. Peel then cut the potatoes into large, fairly even-sized chunks. Bring a large saucepan of salted water to the boil, tip in the potatoes and cook for 15 minutes, until tender but not slushy. 7. While the potatoes are boiling, deesed and finely chop the chilli and the coriander leaves. 8. When the potatoes are done, drain well and return to the saucepan. 9. Push the potatoes to one side of the pan and put the butter into the space. Return the saucepan to a very low heat and let the butter melt. Start mashing the potatoes. 10. Now add the milk and mash the potatoes vigorously, until smooth. Then stir in the chili, coriander, salt and pepper. Take off the heat, put the lid on and keep warm until you're ready to serve.

olive oil flavored cooking spray
600 g beef blade steak, fat trimmed, cut in 3cm cubes
1 onion, thinly sliced
3 garlic cloves, thinly sliced
2 teaspoons fresh ginger, grated
1 tablespoon red curry paste
400 g chopped tomatoes, no added salt
1 cup water
1 tablespoon fish sauce (optional) or 1 tablespoon soy sauce (optional)
750 g sweet potatoes (I prefer the orange one)
1 teaspoon brown sugar

Steps:

  • Preheat oven to 160°C Heat a large flameproof ovenproof pan over a high heat, spray with oil. Add beef in batches. Cook until browned. Remove and set aside.
  • Return pan to a medium-high heat. Spray with oil. Add onion. Cook, stirring occasionally, for 5 minutes. Add garlic, ginger and curry paste. Cook for 1 minute. Return beef to pan. Add tomatoes and water and fish sauce or soy sauce if using. Stir to combine and bring to the boil. Cover and place in oven for 1 hour.
  • Add sweet potato, stir, and return to oven for 30 minutes. Remove and stir through sugar. I garnished with a little chopped fresh coriander and basil but it wasn't in the recipe.
  • Serve with rice and vegetables.
