STIR-FRIED BEEF WITH MUSHROOMS AND ASPARAGUS
This recipe was my first "Mushroom Monday Challenge" dinner. I love stir-fries, and this one comes together in a snap. You can always use any vegetables that you may have on hand if you are short what's listed in the ingredients. Red or green peppers could be used if you don't have asparagus, even a little sliced carrot would be delicious.

Tips:
- Use high-quality ingredients: Fresh asparagus, mushrooms, and beef will make a big difference in the flavor of your stir-fry.
- Cut your vegetables and meat into uniform pieces: This will help them cook evenly.
- Marinate your beef: Marinating the beef in a mixture of soy sauce, rice wine, and sesame oil will help tenderize it and add flavor.
- Cook your stir-fry over high heat: This will help the vegetables stay crisp and the beef cook quickly.
- Don't overcrowd the pan: If you overcrowd the pan, the vegetables and beef will steam instead of stir-fry.
- Add the sauce at the end: Adding the sauce at the end will help prevent the vegetables from becoming soggy.
- Serve immediately: Stir-fry is best served immediately after it is cooked.
