Teriyaki Asparagus and Mushroom Stir Fry image

Delicious veggie side. It's best when the asparagus stays crisp tender

Provided by barbara lentz

Categories     Vegetables

Time 15m

Number Of Ingredients 7

2 bunch asparagus trimmed and cut in half
8 oz fresh mushrooms chopped
1 large shallot chopped
4 Tbsp butter
3 clove garlic minced
1/2 c teriyaki sauce
toasted sesame seeds

Steps:

  • 1. Melt the butter in a large skillet. Add the asparagus, mushrooms and shallot. Sprinkle a little salt over and stir fry until mushrooms have released their water and browned a bit. Add the garlic and stir fry 30 more seconds. Stir in the Teriyaki sauce. Garnish with sesame seeds and serve

Tips:

  • Prep Your Ingredients: Before you start cooking, make sure to wash and chop your asparagus, mushrooms, and green onions. This will save you time and help ensure that your stir-fry cooks evenly.
  • Use High Heat: When stir-frying, it's important to use high heat to create a quick sear on the ingredients. This will help lock in the flavors and prevent the vegetables from becoming soggy.
  • Stir Constantly: To ensure that all of the ingredients cook evenly, stir your stir-fry constantly. This will also help prevent the vegetables from sticking to the pan.
  • Don't Overcook the Vegetables: Asparagus and mushrooms cook quickly, so it's important to not overcook them. Otherwise, they will become mushy and lose their flavor.
  • Season to Taste: Once your stir-fry is cooked, season it to taste with soy sauce, oyster sauce, and salt and pepper. You can also add a squeeze of lemon juice or a drizzle of sesame oil for extra flavor.

Conclusion:

Asparagus mushroom stir-fry is a quick, easy, and delicious meal that is perfect for a weeknight dinner. It's packed with healthy vegetables and flavorful sauce, and it can be easily customized to your liking. So next time you're looking for a healthy and satisfying meal, give this asparagus mushroom stir-fry a try.
