CLASSIC ASPARAGUS FRITTATA

Classic Asparagus Frittata image

This frittata takes only six ingredients usually found on hand. It's so easy to put together. Though I've only made it with Jarlesberg Swiss, you can use your favorite cheese(s) such as fontina, mozzarella, provolone, jalapeno jack, asiago; or a combination of a couple. I increase the olive oil to a tablespoon. Recipe from Simply Recipes online.

Time 45m

Yield 3 servings

Number Of Ingredients 14

1/3 cup long-grain rice
1 1/2 pounds asparagus
1 or 2 bunches of chives to yield 1/2 cup
8 ounces whole red pepper or 7 ounces chopped, ready-cut red pepper (1 1/2 cups)
A few sprigs fresh thyme to yield 1 teaspoon thyme leaves
1/2 pound cooked, peeled shrimp
1 orange
1 1/2 ounces Parmigiano Reggiano (7 heaping tablespoons coarsely grated)
2 large eggs
5 egg whites
1 teaspoon olive oil
1/8 teaspoon salt
Freshly ground black pepper to taste
3 slices crusty country bread

Steps:

  • Preheat oven to 400 degrees.
  • Combine the rice with 2/3 cup water and bring to a boil in heavy-bottomed pot. Reduce heat and simmer, covered, cooking a total of 17 minutes.
  • Wash and trim asparagus by breaking stalks at the point where the tough woody part meets the tender stalk. Take 1 pound of the asparagus and cut the stalks into 1/4-inch pieces. Steam the asparagus for 3 to 5 minutes, until it is tender but still firm.
  • Meanwhile, wash and chop the chives; wash, trim, seed and chop the red pepper into small dices. Wash the thyme and remove leaves from sprigs; cut the shrimp into 1/4-inch pieces; grate the rind of the orange, and grate the cheese.
  • Drain the asparagus. Steam the remaining whole asparagus.

  • Heat a 12-inch nonstick saute pan that can go into the oven over medium-high heat. Add the oil and pour egg mixture in the pan, stirring for about a minute. Reduce heat to low and cook for 2 minutes longer.
  • Drain the whole asparagus.
  • Place saute pan in the oven and bake until the eggs set, about 5 minutes. Loosen the frittata and place a serving plate over the pan. Flip the frittata on to the serving plate. Surround with the whole asparagus. Serve with bread.

LEEK AND ASPARAGUS FRITTATA

Leek and Asparagus Frittata image

Combine soft-cooked vegetables and eggs in this delicious frittata breakfast.

Provided by Bon Appétit Test Kitchen

Categories     Egg     Mushroom     Breakfast     Brunch     Broil     Vegetarian     Quick & Easy     Low Cal     High Fiber     Lunch     Parmesan     Asparagus     Leek     Fontina     Bon Appétit     Sugar Conscious     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 4 servings

Number Of Ingredients 9

2 tablespoons (1/4 stick) butter
1 cup chopped leeks (white and pale green parts only)
1 12-ounce bunch thin asparagus, trimmed, cut on diagonal into 1-inch pieces (about 2 1/2 cups)
1 cup sliced stemmed shiitake mushrooms
8 large omega-3 eggs
1 cup diced Fontina cheese, divided
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup grated Parmesan cheese

Steps:

  • Preheat broiler. Melt butter in heavy broilerproof 10-inch-diameter nonstick skillet over medium heat. Add leeks and sauté 4 minutes. Add asparagus and shiitake mushrooms, sprinkle lightly with salt, and sauté until tender, about 6 minutes. Whisk eggs, 3/4 cup Fontina cheese, 1/2 teaspoon salt, and 1/2 teaspoon pepper in medium bowl. Add egg mixture to skillet; fold gently to combine. Cook until almost set. Sprinkle remaining 1/4 cup Fontina cheese and Parmesan cheese over. Broil until frittata is puffed and cheese begins to turn golden, about 3 minutes. Cut into wedges and serve.

Tips:

  • Choose tender asparagus spears and fresh peas: Look for asparagus spears that are bright green and have tight tips. Fresh peas should be plump and have a sweet flavor.
  • Prepare the asparagus properly: Trim the tough ends of the asparagus spears and cut them into 1-inch pieces. You can also blanch the asparagus spears in boiling water for 2-3 minutes to help preserve their color and flavor.
  • Use a good quality cheese: The type of cheese you use will greatly affect the flavor of your frittata. Use a cheese that melts well, such as cheddar, mozzarella, or Parmesan.
  • Don't overcook the frittata: The frittata should be cooked until it is just set in the center. Overcooking will make the frittata dry and tough.
  • Let the frittata cool slightly before serving: This will help it to hold its shape when you cut it.

Conclusion:

Asparagus pea frittata is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It is packed with healthy vegetables and protein, and it can be customized to your liking. With a few simple tips, you can make a perfect frittata every time.
