ASPARAGUS AND SHRIMP LINGUINE

Asparagus and Shrimp Linguine image

This recipe is from Campbell's Soup (campbellsoup.ca) and it was very well received at our house. The only changes I made was to add more fresh basil and using whole wheat pasta. The recipe says that this feeds 4 people, but we have leftovers for tomorrow night.

Tips:

  • Choose the freshest asparagus: Look for asparagus spears that are firm and have tightly closed tips. Avoid spears that are wilted or have woody ends.
  • Trim the asparagus properly: To trim asparagus, simply snap off the tough ends. You can also use a knife to cut off the bottom inch or two of the spears.
  • Cook the asparagus until it is tender-crisp: Asparagus should be cooked until it is tender but still slightly crunchy. Overcooked asparagus will be mushy and lose its flavor.
  • Use a good-quality shrimp stock: The shrimp stock is the base of the soup, so it is important to use a good-quality stock. You can make your own shrimp stock or use a store-bought stock.
  • Season the soup to taste: The soup should be seasoned to taste with salt, pepper, and other spices. You can also add a squeeze of lemon juice or a dollop of sour cream to the soup.

Conclusion:

Asparagus soup with shrimp is a delicious and easy-to-make soup that is perfect for a light lunch or dinner. The soup is made with fresh asparagus, shrimp, and a creamy sauce. It is flavored with lemon juice, salt, and pepper. Asparagus soup with shrimp is a good source of vitamins A, C, and K, as well as fiber and protein. It is also a low-calorie soup, making it a good choice for people who are watching their weight.
