2 large aubergines
3 tablespoons flour
2 eggs, beaten
1/2 teaspoon salt
black pepper, 1/4 tsp
oil (for frying)
cane honey

Steps:

  • Slice the aubergines into 1/4 " rings.
  • Sprinkle with salt and allow to stand for 30 minutes.
  • Wipe the moisture from the aubergines.
  • Heat the oil in a frying pan.
  • Season the flour with salt and pepper.
  • Coat the slices with flour, then dip into the eggs.

1 eggplant, peeled and cubed
1 large sweet onion, chopped
1 red bell pepper, chopped
1/4 cup corn oil
5 eggs, beaten
1/2 cup cracker crumb
3/4 cup sharp cheddar cheese
salt and pepper

Steps:

  • Place eggplant in salted water and let soak for 30 minutes; drain.
  • Again cover with water and add onion, bell pepper, salt and pepper, cook until tender; drain and mash.
  • Cool.
  • Grease a casserole dish.
