AUNT SYLVIA'S NOODLE PUDDING

1 1/2 cups crumbled corn flakes
3/4 cup sugar, divided
1 tablespoon ground cinnamon
Pinch of nutmeg
12 ounces wide egg noodles
1/3 cup unsalted butter, plus more for buttering the baking dish
1 pound cream cheese
3 large eggs
1 cup whole milk
2 cups apricot nectar

Steps:

  • Preheat the oven to 350 degrees F. In a small bowl, mix together the corn flakes, 1/4 cup of the sugar, cinnamon, and nutmeg.
  • Bring a large pot of water to a boil, salt, and boil the noodles according to package instructions. Drain, and transfer to a large bowl, and toss with the 1/3 cup butter.
  • Meanwhile, in large bowl, combine the cream cheese and remaining 1/2 cup sugar and mix, using a hand held mixer, until light and airy. Add the eggs, milk, and nectar and continue mixing until fully incorporated. Stir the cheese mixture evenly into the noodles. Transfer the noodle mixture into a buttered 9- x 13- x 2-inch baking dish. (Scrap the bowl with a rubber spatula to get all the custard.) Scatter the top of the pudding with the corn flake mixture. Bake until set and golden brown, about 1 hour. Set aside to cool slightly before serving.

6 hot Italian sausages, cut into 1/2 inch pieces
2 cups Simply Potatoes Diced Potatoes with Onion
1 green pepper, chopped
6 medium mushrooms, sliced
2 roma tomatoes, chopped

Steps:

  • In a 12 inch non-stick skillet with lid over medium high heat cook sausage pieces thoroughly. Turning and stirring sausages, browning evenly, about 10 - 15 minutes. Add remaining ingredients tossing to combine with sausage. Continue to cook all for another 15 minutes. Turn heat to low and cover for 10 minutes more. Remove from heat and serve.

1 teaspoon salt (or to taste)
1 small onion, chopped
1 (16 ounce) can tomato sauce
1 cup water
1 teaspoon sugar
1/4 teaspoon oregano
1/4 teaspoon nutmeg
1 (8 ounce) package noodles
2 (10 ounce) packages spinach (thawed and drained)
1 cup ricotta cheese
1/2 cup sour cream
1/4 cup grated parmesan cheese

Steps:

  • Brown beef; add salt and onion. Cook 5 minutes. Add tomato sauce, water, sugar and spices. Set aside.
  • Cook noodles until barely tender. Drain. Add meat sauce mixture.
  • Squeeze dry spinach and chop coarsley.
  • In 3-quart casserole dish, layer half of meat sauce mixture, add next layer of spinach, then remainder of meat sauce mixture.
  • Blend ricotta and sour cream. Spoon over top. Sprinkle with Parmesan cheese.
  • Bake 25-30 minutes in a preheated 375-degree oven.

1 tablespoon olive oil
2 (3/4 lb) pork tenderloin
2 roma tomatoes, seeded and chopped
1/4 cup chopped green olives
1/4 cup dry white wine
1 teaspoon chopped fresh rosemary
2 cloves minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream

Steps:

  • Preheat oven to 400°.
  • Heat the oil in an ovenproof skillet over medium high heat.
  • Season the meat with salt and pepper and brown the pork on all sides in the skillet.
  • Mix together the tomatoes, olives, wine, rosemary and garlic in a bowl and pour over the pork.
  • Place skillet in the oven and bake for 30 minutes or until it reaches an internal temperature of 160°.
  • Remove pork from skillet and cover with foil to keep warm.
  • Place skillet with remaining tomato mixture over medium heat and gradually mix in the cream.
  • Bring to a boil, stirring constantly, then reduce heat to low and continue cooking for 5 minutes until thickened.
  • Slice pork and drizzle with the cream sauce to serve.

2 grilled chicken breasts
1 grilled red bell pepper
1 (13 ounce) can artichoke hearts, sliced
5 slices crispy bacon, chopped
1/2 cup diced red onion
15 -20 cherry tomatoes, cut in half
1 (12 ounce) box bow tie pasta
fresh spinach
balsamic vinegar, viaigrette
feta cheese
2 tablespoons olive oil
1/4 cup lime juice
salt
pepper
garlic

Steps:

  • First, I made a marinade of the oil, juice, and seasonings and soaked the chicken and peppers for about an hour. Meanwhile I cooked the pasta el dente, let it cool and then mixed it with about an equal amount of fresh spinach. I then chopped and added the artichokes, onions, tomatoes, bacon and tossed in the vinaigrette. I grilled the chicken and peppers, the covered them on a plate to cool slightly, before chopping up and putting over the pasta. Add feta when serving.

To a slow cooker chicken, I added an old family noodle recipe. If you want it to be more like a soup, add another quart of broth. This was a fixture at family reunions when I was a child, and the slow cooker makes it even easier.

2 carrots, sliced
2 onions, sliced
2 stalks celery, cut into 1 inch pieces
1 (4 pound) whole chicken
1 teaspoon salt
½ teaspoon ground black pepper
½ cup white wine
¼ teaspoon dried basil
2 eggs, beaten
¼ cup water
1 pinch salt
2 tablespoons shortening
1 cup all-purpose flour, or as needed
2 quarts low salt chicken broth

Steps:

  • Place the carrots, onions and celery in the bottom of a slow cooker. Place the whole chicken on top of the vegetables and season with salt and pepper. Pour in the white wine and sprinkle basil over the top. Cover and cook on Low setting for 8 to 10 hours.
  • In a medium bowl, stir together the eggs, water, salt, shortening and flour to form a stiff dough. After I've mixed in as much flour as possible using a fork, I knead the dough with my hand in the bowl to incorporate as much flour as possible. Let the dough rest for a few minutes.
  • Roll the dough out on a well-greased board to 1/8 inch thickness. Use a pizza cutter or pie crust cutter to cut into strips about 1/2 inch wide and 3 inches long. Dust lightly with flour, and leave to dry for a few hours while the chicken cooks.
  • When the chicken is done, remove the meat and vegetables to a platter. Transfer the juices to a large pot and stir in 2 quarts of chicken broth. Bring to a boil and add the noodles. Cook for about 10 minutes, until tender. Meanwhile, remove the meat from the chicken and shred. Discard bones and skin. When the noodles are done, return the vegetables to the pot and add shredded chicken meat. Serve.
