Avocado and Black Bean Salad image

I'm always on the lookout for any recipe containing avocado, black beans and corn. This great summer salad was sent to me in a recipe exchange and I fell in love with it. Great salad to have for Cinco de Mayo.

Time 10m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 -3 avocados, chopped
1 (15 1/2 ounce) can black beans, drained and rinsed
1 (10 ounce) package frozen white corn, cooked and drained
1/4-1/2 cup onion, chopped
3 roma tomatoes, chopped
1/4 cup cilantro, chopped
1/2 lime, juice of, freshly squeezed
1 dash coarse salt
1 dash olive oil

Steps:

  • Mix together all of the above ingredients. I'm an avocado lover, so I use three, but two is good. You can use fresh corn if you prefer and also use as much chopped onion or squeezed lime as you like. In fact, all of the ingredients are to your own liking, use as much or as little as you want. The lime juice helps to keep the avocado from turning brown. Refrigerate for a couple of hours and serve cold. Enjoy!

Kale, Avocado, and Black Bean Salad image

Our family loves this when we are in the mood for something healthy and satisfying. Even my meat-loving husband loved it! My vegetarian daughter thought this was awesome too. Next time I might try adding cranberries, or substituting pepitas for the pecans.

BLACK BEAN AVOCADO SALSA

Black Bean Avocado Salsa image

This has to be my favorite summer salsa. It's colorful and fresh tasting. It makes a bunch, so invite some friends over. I like to take the lime after it's been juiced and rub down the bowl I will be serving the salsa in. I also rub the lime on the plastic wrap this will help keep the avocados from turning brown. Don't forget the tortilla chips!

AVOCADO SALAD WITH LEMON, BACON AND WATERCRESS

Avocado Salad with Lemon, Bacon and Watercress image

Provided by Tyler Florence

Categories     appetizer

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 6

4 slices bacon
3 avocados, halved and pitted
1/2 bunch watercress, stems trimmed
1 lemon, juiced
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Lay the bacon in a saute pan and bake for 15 minutes, until crispy. Transfer the bacon to a plate lined with paper towels and let it drain for a couple of minutes.
  • Scoop out each half of the avocado using an oversized spoon and arrange on a platter. Scatter the watercress over the avocado and crumble the bacon over the top. Drizzle with the lemon juice and olive oil and sprinkle with salt and pepper.

Tips:

  • Choose ripe avocados: Ensure your avocados are ripe yet firm for the best texture and flavor. Look for avocados that yield slightly to gentle pressure and have a deep, dark green or nearly black skin.
  • Use fresh cilantro: Fresh cilantro adds a burst of flavor and vibrancy to the salad. If you don't have cilantro on hand, you can substitute it with parsley or mint.
  • Drain and rinse the black beans: Rinsing the canned black beans removes excess salt and starch, resulting in a cleaner and more flavorful salad.
  • Chop the vegetables evenly: Evenly chopped vegetables ensure that each bite has a balanced mix of flavors and textures.
  • Make the dressing in advance: Preparing the dressing ahead of time allows the flavors to meld and develop. This can be done up to a few hours before serving.
  • Adjust the spiciness to your preference: If you like a spicy salad, add more chili powder or jalapeño to the dressing. You can also adjust the amount of lime juice to balance the heat.
