8 ounces penne pasta
3/4 pound peeled and deveined shrimp
2 green onions, roughly chopped
2 ribs celery, roughly chopped
1/4 cup olive oil
3 tablespoons lemon juice
1/2 teaspoon dried thyme
Tabasco sauce
2 ripe Haas avocados

Steps:

  • Bring a large pot of salted water to a boil for the penne. Before you boil the pasta, set the shrimp in a strainer and dip them in boiling water to cook them through, a few minutes. Drain, cool, pat dry and cut into 1/2-inch pieces. Add the penne to the same boiling water and cook for about 8 to 10 minutes or until tender but still firm. In a food processor puree the green onions, celery, oil, lemon juice, and thyme. Season to taste with Tabasco sauce.
  • Drain pasta and rinse under cold water to cool thoroughly. Drain again and pat dry.
  • Combine the pasta, shrimp and toss with the dressing. Right before serving, peel, pit and dice the avocados and add them to the pasta. Toss gently and adjust the seasoning.

1 tablespoon vegetable oil
2 hass avocados, diced
1 5-ounce package baby kale salad mix (about 8 cups)
1 small bunch radishes, thinly sliced

Steps:

  • Preheat a grill or grill pan to medium high.
  • Make the dressing. Combine the mayonnaise, celery leaves, 2 tablespoons chopped cilantro, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Grate in the zest of 1 lime and squeeze in the juice.

300 g new potatoes (small baby or chats 10 oz halved)
1 tablespoon olive oil
250 g king prawns (8 oz, cooked and peeled)
1 garlic clove (minced)
2 spring onions (finely sliced)
2 teaspoons cajun seasoning
1 avocado (peeled, stoned and diced)
1 cup alfalfa sprout
salt (to boil potatoes)

Steps:

  • Place the salad leaves, cucumber, red onion and cherry tomatoes onto a plate or into a bowl.
  • Brush a grill plate or a pan with olive oil and the asparagus spears and red pepper. Place onto the grill or pan and cook until slightly browned and cooked al dente. If you like at the same time boil a large egg for 7-8 minutes until softly boiled and leave to cool in cold water.
  • When the asparagus and red pepper is done remove from the heat and 1/2 the asparagus spears and slice up the red pepper and arrange over the salad leaves along with the king prawns, avocado(sprinkled with lemon juice), pine nuts and an egg sliced into 6 if you are using.
  • Drizzle with a little extra virgin olive oil, season to taste and serve immediately with a large dollop of mayonnaise mixed with a squeeze of lemon and seasoned with black pepper.
