AVOCADO BASIL PASTA

Categories     Pasta     Boil

Yield 4 servings

Number Of Ingredients 10

8 ounces dried bow tie and/or wagon wheel pasta
2 medium avocados, halved, seeded, peeled, and coarsely chopped
6 slices bacon, crisp cooked, drained, and crumbled
2/3 cup chopped fresh basil
2 tbsp lemon juices
1 tbsp olive oil
3 cloves garlic, minced
1/4 tsp ground black pepper
1/8 tsp salt
1/2 cup finely shredded Pecorino Romano cheese

Steps:

  • Cook pasta according to package directions. Drain. Meanwhile, in a large bowl combine the avocados, bacon, basil, lemon juice, olive oil, garlic, pepper, and salt. Add the hot pasta and toss to combine. Transfer to a serving bowl. Sprinkle with cheese.

Tips:

  • Use ripe avocados. Ripe avocados are creamier and have a richer flavor than unripe avocados. When choosing avocados, look for ones that are dark green to black in color and yield to gentle pressure.
  • Don't overcook the pasta. Pasta should be cooked al dente, which means it should be tender but still have a slight bite to it. Overcooked pasta will become mushy and lose its flavor.
  • Reserve some of the pasta cooking water. The starchy pasta cooking water can be used to create a creamy sauce for the pasta.
  • Use fresh basil. Fresh basil has a much more vibrant flavor than dried basil. If you can't find fresh basil, you can use a teaspoon of dried basil, but it won't be as good.
  • Add the avocado and basil at the end of cooking. This will help to preserve their flavor and color.
  • Serve immediately. Avocado basil pasta is best served immediately after it is made. The avocado will start to brown if it sits for too long.

Conclusion:

Avocado basil pasta is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. It is also a great way to use up leftover avocado. With its creamy sauce, fresh basil flavor, and tender pasta, this dish is sure to please everyone at the table.
