1 (16 ounce) package tri-color rotini pasta
2 tomatoes, seeded and diced
2 cucumbers - peeled, seeded, and diced
1 (4 ounce) can sliced black olives
½ cup Italian dressing, or more to taste
½ cup shredded Parmesan cheese
1 pinch salt and ground black pepper to taste
1 avocado, diced
1 squeeze lemon juice

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and let cool, 10 to 15 minutes.
  • Mix rotini pasta, tomatoes, cucumbers, olives, Italian dressing, Parmesan cheese, salt, and pepper together in a large bowl. Chill until flavors combine, about 1 hour.

2 scallions, trimmed then sliced crosswise 1/4-inch-thick
Ice
1 pound cucumbers (such as 6 Persian or mini seedless, or 1 English)
Kosher salt
2 very ripe avocados
2 tablespoons fresh lemon or lime juice, or unseasoned rice vinegar, plus more as needed
Red-pepper flakes or hot sauce, for serving

  • Transfer the scallions to a small bowl of ice water to crisp.
  • Peel the cucumbers in alternating stripes, trim ends and cut cucumbers lengthwise. Scoop out the seeds, if desired. 1 large red onion
2 large unblemished avocados, ripe but firm
Juice of 1 lemon
6 teaspoons chopped garlic
2 tablespoons red wine vinegar

1/4 teaspoon red pepper flakes
Salt and freshly ground pepper to taste

Steps:
