This is a favorite recipe I adapted to be gluten free for my husband. It's soft and chewy and doesn't dry out quickly like most gluten free cookies do. It originally came from "Best of Country Cookies" by Taste of Home.

Tips:

  • Use almond flour and tapioca flour: These gluten-free flours create a chewy texture similar to traditional cookies.
  • Chill the dough: Chilling the dough helps the cookies hold their shape and prevents them from spreading too much.
  • Use a cookie scoop: A cookie scoop ensures that all of the cookies are the same size and shape, which helps them bake evenly.
  • Bake the cookies until the edges are golden brown: This will ensure that the cookies are cooked through but still have a soft and chewy center.
  • Let the cookies cool completely before storing them: This will help them keep their shape and texture.

Conclusion:

These gluten-free chocolate chip cookies are a delicious and easy-to-make treat that everyone can enjoy. With a few simple ingredients and a little bit of time, you can create a batch of cookies that are just as good as the traditional kind. So next time you're craving a sweet snack, give these gluten-free chocolate chip cookies a try. You won't be disappointed!
