This is a sandwich that I crave a lot. I am just posting it because I couldn't find it posted already on the Zaar...I couldn't believe that! My ex-DH wondered how I make these, so I decided to post it and send him the recipe. Nothing fancy -- just the real, simple, unabridged version. UPDATE: After reading Peg629's review, I have tried it that way, with one slice of toast spread with yellow mustard, and I must say it really, really makes an exceptional BLT! Such a subtle difference, yet genuinely makes a superior BLT, in my opinion! (Thank you Peg629 for that awesome suggestion!)

1/2 lb bacon (approx. 12 slices)
8 slices white bread
8 leaves iceberg lettuce, fresh and full
8 slices of ripened tomatoes
8 tablespoons Hellmann's mayonnaise

Steps:

  • Cook bacon until crispy, then drain on paper towels.
  • Toast the 8 slices of bread.
  • Spread 1 tablespoon mayo on each slice of toasted bread. (More or less, to taste).
  • Add 1 slice of lettuce to 4 pieces of mayo-spreaded toast.
  • Add 2 slices of tomato on top of lettuce.
  • Arrange 3 slices of bacon evenly on top of tomato. (Break bacon slices in half to fit, if needed.).
  • Add 1 slice of lettuce on top of bacon.
  • Put the remaining 4 pieces of mayo-spreaded toast on top to finish the sandwiches.
  • Enjoy!
  • NOTE: I also like to butter the toast slices before adding the mayo -- higher in fat, but tastier, in my opinion!

1 teaspoon unsalted butter, room temperature
1 to 2 romaine or iceberg lettuce leaves
1 vine-ripened tomato, sliced 1/4 inch thick
3 to 4 basil leaves
2 slices thickly cut bacon, cooked
1/2 cup Homemade Mayonnaise
Coarse salt and freshly ground pepper

Steps:

  • Spread one side of one slice of toast with butter. Arrange lettuce on top, along with tomato and basil. Season with salt and pepper. Top with bacon. Spread remaining slice of toast with mayonnaise; place mayonnaise side down to form a sandwich and cut on the diagonal. Serve immediately.

A delicious BLT sandwich prepared either with bacon or vegetarian bacon. I came up with this recipe after having just come home from the farmers' market with a large bag of fresh produce, a rumbly tummy, and determination on my face. If you're taking the vegetarian route, you can use Morning Star Farms' brand fake bacon ("facon") or we prefer to use tempeh bacon because the slices are thick. For regular bacon, if you're a black pepper lover, try pepper bacon from the deli! My brother suggested the optional avocado and sprouts.

1 loaf of your favorite artisan style bread such as olive bread, multi grain or 1 loaf seeded bread, etc
4 slices bacon or 4 slices vegetarian bacon
baby spinach leaves or both mixed greens and spinach, rinsed and patted dry
2 small firm roma tomatoes, sliced or 2 small yellow tomatoes
1 small red onion, sliced
mayonnaise, for spreading
salt or fresh ground pepper
fresh basil leaf (not dried)
avocado, sliced (optional)
alfalfa sprout (optional)

Steps:

  • Cook bacon until crisp and set aside on a paper towel to soak up the grease, if necessary.
  • You can toast or leave untoasted the bread. Cut bread into sandwich slices.
  • Spread a little bit of mayonnaise or pesto onto one side of each slice of bread.
  • Layer the bacon, the salad greens, the tomatoes, the red onion, and basil leaves, the avocado and alfalfa sprouts if using onto one slice of bread. I use about four basil leaves for each sandwich. Season sandwich with salt and pepper if desired.

  • Cut in half or in quarters.

8 slices maple bacon
8 ounces cream cheese, softened to room temperature
3 tablespoons capers in brine, drained and chopped
2 tablespoons minced fresh chives
2 tablespoons honey mustard
Kosher salt and freshly ground black pepper
8 slices pumpernickel swirl bread
12 ounces sliced smoked salmon
1 small red onion, sliced very thinly
1 to 2 small Roma tomatoes, very thinly sliced into rounds
Baby arugula, for topping

Steps:

  • Preheat the oven to 400 degrees F.
  • Evenly space the bacon on a baking sheet lined with a wire rack and bake until crispy, 15 to 18 minutes. Drain the bacon on paper towels, reserving the bacon fat from the pan. Reduce the oven temperature to 350 degrees F. Once cooled, finely mince the bacon.
  • For the caper spread: In a bowl, combine the cream cheese, capers, chives and honey mustard, and season with salt and pepper. With a rubber spatula, mix all the ingredients until combined. Adjust the seasoning if necessary.
  • For the sandwich build: Cut the crusts from the bread. Brush slices on one side with the reserved bacon fat and transfer to the oven to warm through, about 5 minutes. Smear the fat side of four slices with some caper spread. Layer with 1 1/2 ounces of smoked salmon, some red onion, tomato, minced bacon and arugula. Top with another slice of bread and cut each sandwich into thirds, to make finger sandwiches.
