Steps:

  • You need 2 large handfuls of baby spinach -- check for nasty stalky or wilted bits and then give it a really good wash (nobody likes gritty spinach). Spin dry, and add to a salad bowl with 2 smaller handfuls of fresh peas (unless you are lucky enough to get young peas which are sweet and tender, you should blanch the peas in boiling, unsalted water and leave to cool). Dress the salad at the last minute with olive oil and lemon juice dressing and sprinkle crumbled feta cheese over the top.

Tips:

  • When selecting watermelon for the salad, choose one that is ripe and juicy. A good way to tell if a watermelon is ripe is to look for one that has a deep red color and a firm rind. You can also thump the watermelon with your hand; if it sounds hollow, it is likely ripe.
  • To easily remove the rind from the watermelon, cut it in half lengthwise and then use a spoon to scoop out the flesh. You can also use a melon baller to create small balls of watermelon.
  • If you don't have any feta cheese on hand, you can substitute another type of cheese, such as goat cheese or mozzarella.
  • Toasting the pistachios in a skillet before adding them to the salad will enhance their flavor.
  • You can add other ingredients to the salad, such as crumbled bacon, chopped walnuts, or dried cranberries.

Conclusion:

This baby spinach and watermelon salad with feta and pistachios is a refreshing and delicious summer dish. It is easy to make and can be tailored to your own taste preferences. With its vibrant colors and flavors, this salad is sure to be a hit at your next party or potluck.
