  • GETTING READY 1. Rub the cut surface of garlic on both sides of the steaks. 2. Into a measuring cup, drain the mushroom liquid and add beer to equal ½ cup. MAKING 3. Place steak on a broiler pan and broil 3 inches from heat until cooked according to desired degree of doneness. Remove to a serving platter and keep warm. 4. Spoon 2 tablespoons of the warm drippings into a saucepan. 5. Add flour and seasoning and stir to blend into a paste. 6. Add the mushroom-beer mixture and whisk until well blended. 7. Place pan over a medium low flame and cook the sauce, stirring constantly, until thick and simmering. 8. Stir in the drained mushrooms and heat sauce. SERVING 9. Pour beer-mushroom sauce over steak and serve with potatoes or vegetables on the side.

1/2 cup olive oil
1/3 cup soy sauce
4 scallions, washed and cut in 1/2
2 large cloves garlic
1/4 cup lime juice
1/2 teaspoon red pepper flakes
1/2 teaspoon ground cumin
3 tablespoons dark brown sugar or Mexican brown sugar
2 pounds inside skirt steak, cut into 3 equal pieces
Special equipment: blow dryer

Steps:

  • Heat charcoal, preferably natural chunk, until grey ash appears. In a blender, put in oil, soy sauce, scallions, garlic, lime juice, red pepper, cumin, and sugar and puree. In a large heavy duty, zip top bag, put pieces of skirt steak and pour in marinade. Seal bag, removing as much air as possible. Allow steak to marinate for 1 hour in refrigerator.
  • Remove steak from bag and pat dry with paper towels. Using a blow dryer, blow charcoal clean of ash. Once clean of ash lay steaks directly onto hot coals for 1 minute per side. When finished cooking, place meat in double thickness of aluminum foil, wrap, and allow to sit for 15 minutes.
  • Remove meat from foil, reserving foil and juices. Slice thinly across the grain of the meat. Return to foil pouch and toss with juice. Serve with grilled peppers and onions, if desired.

  • First, cut the keilbasa into 1/2 inch thick medalions.
  • Heat a medium sized skillet to medium to medium high heat and melt enough butter to just cover the bottom.
  • Add the keilbasa and garlic.
  • Once the keilbasa starts to brown on one side, add enough beer to just cover the bottom.
  • Turn the keilbasa and cook on the other side.
