BEER, BACON, AND CHEDDAR CORN BREAD

Beer, Bacon, and Cheddar Corn Bread image

From the cookbook The Gourmet's Guide to Cooking With Beer by Alison Boteler. I left the bacon out when I made it, but I definitely think it would have added something extra. I used reduced fat cheddar cheese and it was delish.

Time 1h10m

Number Of Ingredients 8

6 slice thick cut bacon, fried and coarsely chopped, 2 t. grease reserved
3 c all purpose flour
1/4 c sugar
1 Tbsp baking powder
1/2 tsp salt
4 oz extra sharp cheddar cheese, shredded (1 cup)
12 oz bottled beer
4 Tbsp unsalted butter, melted

Steps:

  • 1. Prehead oven to 350 degrees. Grease a 9x5 inch loaf pan and line with parchment paper; set aside.
  • 2. In a large bowl, whisk together the flour, sugar, baking powder and salt. With a wooden spoon, stir in the bacon and cheese until evenly distributed. Add the beer and stir with the spoon until the batter is evenly moistened.
  • 3. Pour the melted butter into the bottom of the prepared loaf pan, and spoon the batter on top. Drizzle the bacon grease evenly over the top of the batter.
  • 4. Bake until a thin skewer inserted into the middle comes out clean, 50 to 60 minutes. Remove from the oven and allow to cool for at least 10 minutes before slicing and serving. Leftovers can be wrapped in plastic wrap and stored at room temperature for up to 3 days.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the bread will taste. This is especially true for the beer, which should be fresh and cold.
  • Don't overmix the dough: Overmixing the dough will make the bread tough. Mix the dough just until it comes together, then stop.
  • Let the dough rise in a warm place: The dough needs to rise in a warm place in order to double in size. A warm oven or a sunny windowsill are both good places to let the dough rise.
  • Bake the bread at a high temperature: The bread should be baked at a high temperature so that the crust gets crispy. A temperature of 400 degrees Fahrenheit is ideal.
  • Let the bread cool before slicing: Once the bread is baked, let it cool for at least 10 minutes before slicing. This will help the bread to hold its shape.

Conclusion:

Bacon and cheddar beer bread is a delicious and easy-to-make bread that is perfect for any occasion. It is a great way to use up leftover beer and it is also a great bread to serve with soup or chili. With its crispy crust, soft interior, and flavorful bacon and cheddar cheese, this bread is sure to be a hit with everyone who tries it.
