BACON AND CHEESE OVEN OMELET
I found this recipe in a family cookbook put together for a bridal shower. I love the fact that I can put the omelet to bake in the oven while I make other ingredients, such as #8602 Sausage Gravy and Biscuits, on the stove. With the addition of fresh fruit, the combination was a huge hit with visiting company.

Steps:
- Fry bacon and drain; chop into pieces. (I make mine in the microwave).
- Arrange cheese slices in the bottom of a lightly-buttered 9 inch pie pan. (I use glass.).
- Beat together eggs and milk with a fork. Add chopped bacon and pour over cheese.
- Bake at 350° for 45 to 50 minutes, until eggs are set in the middle.
- Let stand 5 minutes before cutting.
- Note: you can reheat left-over portions in the microwave upside down, with cheese on the top.
- You might want to add some herbs on the top, too!
BACON, MUSHROOM AND PEPPER JACK CHEESE OMELET
This is my version of the BMP Omelet that is served at our local Shari's Restaurant. I tapered it down to just 2 eggs for an individual serving, since their 3-egg omelet is a little too filling for me. And sometimes I omit the bacon pieces, and it's just as good. I don't really measure the filling ingredients, but rather just toss in whatever amount I want at the time. But I had to list specific quantities to post this recipe, which are rough estimates. So feel free to adjust the quantities of each ingredient to suit your taste preferences. The system would not accept "Pepper Jack Cheese" as an ingredient (no matter what I did, it changed that ingredient to Monterey Jack cheese). But Pepper Jack really is the variety of Monterey cheese you will want to use in order to get that peppery zing that is the focal point of this omelet. So I had to write that ingredient as cheese, then specify it to be grated Pepper Jack.

Steps:
- Lightly spray 8-inch skillet with no-stick spray. Heat skillet over medium heat.
- In a bowl beat together eggs, milk, salt and pepper until frothy. Pour into heated skillet.
- Cook, uncovered, without stirring for about 4 minutes and eggs start to set. As eggs start to set, run a spatula around the edge of the skillet and lift eggs slightly so the uncooked portion can flow underneath.
- When eggs are almost set, sprinkle the crumbled bacon pieces, sliced mushrooms and Pepper Jack cheese down the center of the omelet; let cook another 1 to 2 minutes, or until eggs are set throughout and the cheese is just starting to melt.
- Fold the omelet in thirds by folding one side of the omelet over the filling, and then folding the other side over the first side.
- Transfer the omelet to a plate. Garnish the top of the omelet with sliced black olives and green onion slices.

OMELET WITH BACON AND PARMESAN CHEESE
Simplicity. The comfort of bacon with a touch of sophistication from Parmesan cheese and Italian seasoning. Please do not add additional salt, it is not needed! I prepared this this morning to finish off a bottle of shredded Parmesan cheese. Each serving is a 3-egg omelet. The cooking time is long because I cook my bacon on low heat. But I can't stop you from cooking it your way, can I?

Steps:
- Cook 2 pieces of bacon on medium-low heat in 10-inch saute pan, until browned but not super crisp. After first side has browned, turn over to brown other side. The second side will take almost no time.
- Place cooked bacon on paper-towel-lined plate, and blot top with paper towel. When cool, crumble bacon and set aside.
- Pour off all but 1 tablespoon of bacon grease.
- With a fork, lightly beat eggs with Italian seasoning. Do not add salt; I don't think pepper is needed, either.
- Heat pan with remaining bacon grease to medium heat. Then pour in egg batter.
- As egg sets, gently push egg batter from pan's side toward 2 inches from center with a spatula, and repeat on other side. Let fluid egg batter fill exposed pan.
- Again, as egg sets, begin 90 degrees from before, push egg batter from pan's side, etc. The idea is to ensure that uncooked egg batter gets exposed to the heat. Try not to end up with all of the egg piled in the center of the pan.
- As top of egg starts to set, sprinkle crumbled bacon on one half of omelet. Sprinkle parmesan cheese across entire top surface of omelet. If bottom of omelet seems set, but top is not done, put a lid on the pan for about a minute to assist.
- When top has set, turn off heat, turn bacon-less half over to cover bacon half. With spatula, cut in half and serve half on one plate, and other half on another plate.
- Serves two, each is a 3-egg omelet.
OMELET WITH SMOKED BLEU CHEESE AND CARAMELIZED BACON
I had Oregon-made Rogue Creamery 'Smokey Blue' blue cheese leftover and thought I'd throw an omelet together after reading the description of said cheese. Experiment with another fresh herb of choice. May I suggest this recipe for caramelizing the bacon?: Recipe #421812. I used a combination of garlic-flavored olive oil and butter.

Steps:
- Whisk the eggs in a bowl with some cracked black pepper.

- Heat up the (garlic-flavored) olive oil and/or butter in an omelet pan on medium heat.
- Pour in the eggs (and garlic if using) and cook gently until just ready to fold.
- Fold the sides in to the center of the omelet and plate. (Yes, the center of the omelet will be slightly runny.) The bottom of the omelet should not be brown at all.
- Garnish with a small amount of bleu cheese, the crumbled bacon, chopped hazelnuts and fresh parsley.
- We served our omelet with steamed carrots and roasted small Yukon gold potatoes for an easy weeknight meal.

B.A.B.B. BACON, AVOCADO, BASIL AND BLUE CHEESE OMELET
Steps:
- Diced bacon and cook until crispy in frying pan. Remove bacon and set aside and discard the oil fat. Wash or wipe the frying pan and put back on the stove in medium heat. Melt the butter in the pan. Lightly beat the eggs in a small bowl and immediately pour in the pan. As the eggs begin to settle, use a spatula/ wooden spoon, push the eggs towards the center while tilting the pan to distribute runny parts. Continue this motion until eggs stop flowing. Start adding the bacon, basil, avocado and blue cheese on one side of the egg. Leave to cook until the edges/bottom is browned. Fold omelette into half and serve!
Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the flavor of your omelet.
- Don't overcook the eggs. Omelets should be cooked until they are just set, but still slightly runny in the center.
- Be generous with the fillings. Omelets are a great way to use up leftover vegetables, cheese, and meat.
- Fold the omelet over instead of scrambling it. This will give it a more elegant appearance and make it easier to eat.
- Serve the omelet immediately. Omelets are best enjoyed fresh out of the pan.
Conclusion:
Omelets are a versatile and delicious breakfast, lunch, or dinner option. They are easy to make and can be customized to your liking. With a little practice, you can make perfect omelets every time.
