Steps:
- Preheat the oven broiler.
- Mash the avocados in a medium bowl until slightly chunky. Stir in the scallions, lemon juice, 1/2 teaspoon salt and a few grinds of pepper and set aside.
- Arrange the bacon in a large nonstick skillet over medium heat and cook until brown and crisp, about 4 minutes per side. Transfer to a paper towel-lined plate and reserve the drippings in the skillet. Brush each slice of bread with some bacon drippings. Arrange the bread on a baking sheet, bacon dripping side-up, and broil until lightly toasted.
- Spread each toast with 1/4 of the mashed avocado, break each piece of bacon in half and top each toast with 2 halves.
Tips:
- Choose ripe avocados. Ripe avocados are easier to mash and spread, and they have a creamier texture.
- Use a good quality bread. A thick, sturdy bread will hold up better to the toppings. Some good options include sourdough, whole wheat, or rye bread.
- Don't be afraid to experiment with different toppings. In addition to the classic bacon, avocado, and maple syrup combination, you can also add other toppings such as eggs, cheese, tomatoes, or sprouts.
- Make it a meal. Bacon avocado toast can be a quick and easy breakfast or lunch. You can also serve it as a side dish with soup or salad.
Conclusion:
Bacon avocado toast is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be customized to your liking. So next time you're looking for a quick and easy meal, give bacon avocado toast a try.
