4 slices crusty Italian bread
1/4 cup plus 1 tablespoon extra-virgin olive oil
2 ripe avocados
3 tablespoons minced fresh chives
3 tablespoons minced fresh parsley
2 teaspoons lemon juice
Kosher salt and freshly ground black pepper
1 large tomato, coarsely chopped
4 slices cooked bacon, chopped
Flaky sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Drizzle the bread slices with 1/4 cup of the olive oil. Place the bread on a baking sheet and bake until golden brown, 12 to 15 minutes.
  • Mash the avocados in a small bowl. Add 2 tablespoons each of the chives and parsley, the lemon juice, 1/2 teaspoon kosher salt and 1/2 teaspoon pepper; mix until fully combined.
  • Toss the tomatoes, the remaining 1 tablespoon each olive oil, chives and parsley, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a small bowl.
  • Spread each slice of bread with 1/2 cup of the avocado mixture and 1/8 cup of the tomato mixture. Sprinkle with the chopped bacon and flaky sea salt.

5 organic avocados, cut, pitted and slice
1 loaf crusty french bread, store bought or homemade
1 package organic bacon, cooked in microwave 9 minutes
1 organic lime
Salt and pepper, to taste
Organic maple syrup, as desired

Steps:

  • If making bread, make 1 1/2-pound loaf the night before, so it can cool properly. Slice bread and place on a parchment paper lined cookie sheet. Preheat broiler to 450°F. Remove bacon from package. Place on a dinner plate covered in paper towels. Cover with paper towels. Cook bacon in microwave for 9 minutes. If you have never cooked bacon in the microwave start at 5 minutes and then add more time in 1 minute increments. Cut, pit and slice out avocados into strips. Or scoop out avocados and mash up adding lime, salt and pepper. Put bread under broiler for 4 minutes. Add time if you want your bread crispier. Remove bread from broiler. Let cool until bacon is cooked. Put avocado in toast. Remove bacon from microwave. Discard paper towels. Toast with bacon and drizzle with maple syrup. Enjoy.

2 chunky slices granary bread

4 slices bread (good, solid and crusty)
2 avocados (ripe and reasonable soft)
1/2 lemon (juice of)
salt (freshly grounded to taste)
pepper (freshly grounded to taste)
8 slices bacon (best, rind removed and cut in half)

Steps:

  • Have the bread slices ready to toast.
  • Peel and stone the avocadoes and mash them roughly and add the lemon juice and season well.
