4 large russet potatoes, scrubbed and cut into pieces
¼ cup butter
4 slices thick sliced bacon
⅓ cup chopped onion
1 cup cottage cheese
1 ½ cups chopped green onion
½ cup shredded Cheddar cheese
salt and pepper to taste
2 tablespoons butter, cut into pieces
¼ cup shredded Cheddar cheese
¼ teaspoon paprika, for garnish

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Return potatoes to pot and roughly mash them with 1/4 cup butter.

Bacon Cheddar Potato Croquettes combine the flavors of crispy bacon, melted cheddar cheese, and tender potatoes into bite-sized treats. Ideal for parties, snacks, or side dishes, these croquettes are easy to make by following these tips:

Tips:

  • Choosing Potatoes: Select starchy potatoes like Russet or Idaho potatoes for a fluffy interior. Yukon Gold potatoes can also be used for a slightly denser texture.
  • Boiling Potatoes: Boil the potatoes until tender but not mushy. Overcooked potatoes will result in a mashed potato-like texture.
  • Mashing Potatoes: Use a potato ricer or masher to achieve a smooth and lump-free potato mixture. Avoid using a food processor, as it can overwork the potatoes and make them gummy.
  • Seasoning: Don't skimp on the seasoning! Add salt, pepper, garlic powder, and onion powder to taste. You can also experiment with other herbs and spices like paprika, chili powder, or cumin.
  • Frying Croquettes: Heat the oil to the correct temperature before frying the croquettes. Use a deep fryer or a large saucepan with at least 2 inches of oil. The oil should be between 350°F and 375°F (175°C to 190°C).
  • Draining Croquettes: After frying, drain the croquettes on paper towels or a wire rack to remove excess oil.

Conclusion:

With crispy exteriors, fluffy interiors, and the perfect balance of flavors, Bacon Cheddar Potato Croquettes are sure to be a hit. Serve them as an appetizer, snack, or side dish with your favorite dipping sauce. Whether you're making them for a party or a casual family meal, these croquettes are guaranteed to satisfy. So gather your ingredients, follow these tips, and enjoy this delightful culinary experience!
