BACON CHEESEBURGER MEATLOAF MUFFINS
I found this on the Tasty Kitchen website while I was trying to find something to make for dinner. I changed a TON of things from the original because the first time I made it, I baked the muffing until they were burnt on top, but they never cooked on the inside. I added more breadcrumbs and subtracted some of the moist ingredients to get this recipe turned into something not quite so disappointed (but at least the cooked tops tasted good!).

BACON-CHEESEBURGER MEATLOAF

Steps:
- Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.P
- Cook the Onions: Pulse onion in food processor until finely chopped (or do so by hand). Heat 2 tablespoons olive oil in a large skillet over medium-high. Add onion and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until onion is softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
- Prep the Meat and Glaze: In a small bowl, stir together 1/2 cup ketchup and brown sugar for glaze; set aside. In a large bowl, combine onions with ground chuck, 1 egg, 1/2 cup reserved breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined. Gently fold in cheddar.
- Bake and Let Cool: On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with 1/2 of glaze, then top with bacon, overlapping slices slightly. Brush remaining glaze over bacon. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes.
Tips:
- Choose the right ground beef. For the best flavor and texture, use a combination of ground chuck and ground sirloin. This will give your meatloaf muffins a juicy and flavorful interior, without being too greasy.
- Don't overmix the meat. Overmixing can make your meatloaf muffins tough. Mix the ingredients just until they are combined.
- Use fresh bread crumbs. Fresh bread crumbs will help to bind the meatloaf muffins together and give them a light and airy texture. Avoid using store-bought bread crumbs, as they can be dry and crumbly.
- Season the meatloaf muffins well. Don't be afraid to add plenty of salt, pepper, and other seasonings to your meatloaf muffins. This will help to bring out the flavor of the meat and the other ingredients.
- Cook the meatloaf muffins at a high temperature. This will help to create a nice crust on the outside of the muffins, while keeping the inside moist and juicy.
- Let the meatloaf muffins rest before serving. This will help the juices to redistribute throughout the muffins, making them even more flavorful.
Conclusion:
Bacon cheeseburger meatloaf muffins are a delicious and easy-to-make meal that is perfect for a weeknight dinner. They are also a great way to use up leftover hamburger meat. With just a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will enjoy.
