Steps:

  • For the buttermilk-chive dressing: Combine the buttermilk, sour cream, mayonnaise and lemon juice in a small bowl and whisk well. Stir in the chives and garlic and season with salt and pepper. Refrigerate until ready to serve.
  • For the maple-glazed bacon: Preheat the oven to 350 degrees F. Set a wire rack in a baking sheet and spray the rack with cooking spray.

1 cup shredded cheddar cheese (plus extra for garnish)
½ of a sweet onion (such as Vidalia, diced)
1 green bell pepper (diced)
2 ribs celery (diced)
1 16 ounce jar mayonnaise
1 teaspoon garlic salt
2 cups chopped fresh tomatoes
3 slices bacon (cooked and crumbled)
Optional: chopped fresh chives for garnish

Steps:

  • Prepare both packages of cornbread according to package instructions, adding 1 cup of shredded cheese to the batter before baking.
  • Allow cornbread to cool completely. Crumble into large pieces over a very large bowl.

2 eggs
⅔ cup milk
¾ cup crumbled cooked bacon

1 tablespoon shortening (for the skillet)
1 3/4 cups cornmeal
1/2 cup all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 1/4 cup buttermilk
1 large egg
3 tablespoons melted butter
Salad:
1 envelope ranch dressing mix (about 2 tablespoons)
1 cup sour cream, or to taste
1 cup mayonnaise, or to taste
3 tomatoes (chopped)
1/2 cup each of red bell pepper and green bell pepper (chopped)
1/2 cup green onion (chopped)
30 ounces canned pinto beans
10 strips bacon (fried crispy and crumbled)
2 cans whole kernel corn (drained) or Fiesta corn with peppers
Optional : 2 cups shredded cheddar cheese

Steps:

  • Heat the oven to 425 F/220 C/Gas 7.
  • Put 1 tablespoon of shortening in a 9- or 10-inch skillet and place the skillet in the oven.
  • Combine the cornmeal and flour in a large bowl and add the baking powder, soda, and salt.
  • In another bowl whisk the buttermilk with the egg and 3 tablespoons of melted butter.
  • Take the skillet out of the oven and place it on a rack.
  • Combine the dry mixture with the buttermilk mixture and stir to blend well.
  • Pour it into the hot skillet and return the skillet to the oven.
  • Reduce the oven temperature to 375 F/190 C/Gas 5 and bake the cornbread for 20 to 24 minutes, or until browned and crusty around the edges.
  • Remove the cornbread to a rack and cool completely.
  • Stir together salad dressing mix, sour cream, and mayonnaise until blended; set aside.
  • Combine the chopped tomatoes, bell peppers, and onions. Toss gently.
  • Crumble half of the cornbread into a large bowl.
  • Top with half each of beans, tomato mixture, bacon, corn, cheese (if using), and dressing mixture. Repeat layers.
  • Cover the bowl and chill the salad for at least 3 hours.
  • When ready to serve, take it out of the refrigerator and gently stir the mixture.

3 pounds boneless beef chuck, 1-inch cubes
Kosher salt and freshly ground black pepper
Oil, if needed
2 medium carrots, chopped
1 jalapeno, minced
1 medium yellow onion, chopped
2 cloves garlic, minced
1 tablespoon baharat
1 teaspoon chili powder
One 14-ounce can fire-roasted diced tomatoes
One 14-ounce can beef broth
Two 14-ounce cans chickpeas, drained
1/2 cup golden raisins
1 cup cornmeal
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1 large egg
1 stick unsalted butter, melted and cooled
1 cup whole milk Greek yogurt, plus more for serving
1 tablespoon honey
1 jalapeno, minced
Chopped fresh parsley, for garnish

Steps:

  • For the spiced beef hot dish: Place the bacon in an even layer in a Dutch oven or large cast-iron pan and turn the heat to medium-high. Cook until crispy and the fat is rendered, a few minutes per side. Meanwhile, sprinkle the beef with salt and pepper. Remove the bacon to paper towels to drain, leaving the bacon fat in the pan. Working in batches, place the beef in an even layer in the Dutch oven and sear until browned on all sides, adding a drizzle of oil if the Dutch oven ever seems dry, about 4 minutes per side. Remove to a plate or shallow bowl. Crumble the bacon and set aside.
  • Reduce the heat to medium and add the carrots, jalapeno and onion and cook until translucent, 7 to 10 minutes. Add the garlic and cook 1 minute. Add the baharat and chili powder and toast with the vegetables, 1 minute. Add the tomatoes and broth and bring to a boil. Add the beef and any accumulated juices, the chickpeas and raisins. Reduce to a simmer, then cover and let cook 1 to 1 1/2 hours. Season to taste.
  • For the cornbread: Preheat the oven to 400 degrees F.
  • Whisk together the cornmeal, flour, baking powder, baking soda and salt in a large bowl. Whisk together the egg, melted and cooled butter, yogurt and honey in a medium bowl. Add the wet ingredients to the dry ingredients. Fold in the jalapeno and bacon.
  • Using a cookie scoop, dollop the cornbread batter on top of the chili to cover. Bake, uncovered, until golden brown, 25 to 30 minutes. Remove and serve with yogurt and chopped parsley.

But, do NOT leave out the cornbread. It's my favorite dish to take to potluck or covered dish suppers - and there is never any left! For vegetarians, omit the real bacon bits. Vary the ingredients to suit your taste and ingredients on-hand.

1/4 cup Egg Beaters egg substitute or 1/4 cup egg substitute

16 fat free ranch dressing (OR make your own 1 pkg. dry Ranch salad dressing mix, 8 ounces fat-free sour cream, and 1 cup low-fa)
16 ounces canned pinto beans, drained and rinsed
16 ounces cranberry beans or 16 ounces october beans
