BACON, SPINACH, AND EGG SCRAMBLE

Bacon, Spinach, and Egg Scramble image

This is my new favorite way to scramble eggs. I don't have the cooking chops to flip an omelet, but I can mix the same ingredients together. It may not be as pretty, but it tastes just as good!

Time 15m

Yield 1 serving(s)

Number Of Ingredients 7

1 egg
2 egg whites
1/2 fresh spinach, chopped
2 slices bacon, sliced
1 tablespoon milk
1 tablespoon shredded cheddar cheese
salt and pepper

Steps:

  • Fry chopped bacon in a non stick skillet.
  • Beat together egg, egg whites, milk, salt, and pepper.
  • When bacon is almost done, add chopped spinach and saute until just wilted.
  • Add egg mixture and scramble.
  • Top with cheddar cheese.

Tips:

  • Prep Ahead: For a quick and easy breakfast, cook the bacon and hard-boil the eggs the night before.
  • Use Fresh Spinach: Baby spinach or regular spinach works well in this recipe. Wilt the spinach just until it's tender, about 1-2 minutes.
  • Season Generously: Don't be afraid to season the eggs, spinach, and bacon with salt and pepper. This will help bring out the flavors of each ingredient.
  • Use Different Types of Bread: Feel free to use any type of bread you like for the stacks. Sourdough, whole wheat, or even English muffins would all be great options.
  • Add Extra Toppings: For a more flavorful stack, add additional toppings like sliced avocado, salsa, or crumbled cheese.

Conclusion:

These bacon, egg, and spinach breakfast stacks are the perfect way to start your day. They're packed with protein, healthy fats, and vitamins, and they're absolutely delicious. With a little planning, you can easily make these stacks ahead of time, making them a great option for busy weekday mornings.
