1 lb of your favorite pizza dough
2 cups Simply Potatoes® Shredded Hash Browns
1 (7 ounce) jar bacon jam (I used Skillet Bacon Spread)
3 cups shredded mozzarella cheese, separated in half
4 eggs

Steps:

  • Place a pizza stone in the oven and preheat oven to 500°.
  • Take potatoes out of bag and place in a colander. Rinse and drain well. Place potatoes in a clean dish towel and wring dry.
  • Roll out pizza dough to a 10 - 12" round.
  • Spread rolled out dough with 2/3 of the bacon jam.
  • Top jam layer with one and a half cups of cheese.
  • Top cheese with hash browns.
  • Spread remaining cheese over hash browns.
  • Make 4 small depressions in each quadrant of the pizza.
  • Place 1 egg in each of the depressions.
  • Dollop remaining bacon jam around top of pizza.
  • Bake for 12 minutes, until egg white is cooked and yolk is runny.
  • Note: Everyone's oven bakes differently. My oven is temperamental and takes longer to bake the eggs. Keep an eye on your eggs while they bake and adjust cooking time accordingly.

1/4 cup extra-virgin olive oil
1 pound refrigerated pizza dough, at room temperature
1 1/2 pounds Yukon Gold potatoes (about 4 medium)
Kosher salt and freshly ground pepper
3 ounces Cambozola or blue brie cheese, rind removed, cut into 1-inch pieces
Chopped fresh chives, for topping

Steps:

  • Freeze the bacon on a plate until firm, 20 to 30 minutes (this will make it easier to chop). Dice the bacon and set aside.
  • Meanwhile, place a pizza stone or inverted baking sheet in the top third of the oven and preheat to 475 degrees F. Brush a large piece of parchment paper with 2 tablespoons olive oil. Stretch the pizza dough into an 11-by-15-inch rectangle on the parchment. Transfer the dough (on the parchment) to a pizza peel or another inverted baking sheet; set aside.
  • Peel and very thinly slice the potatoes with a mandoline or knife and place in a large microwave-safe bowl. Cover with plastic wrap and microwave until tender, 3 to 4 minutes. Uncover and toss the potatoes with the remaining 2 tablespoons olive oil, 1 teaspoon salt and a few grinds of pepper until fully coated.
  • Spread the potatoes all over the pizza dough, with a slightly thinner layer in the center. Top with the bacon. Slide the pizza (on the parchment) onto the hot pizza stone and bake until the crust is golden and the potatoes are tender and crisp around the edges, 30 to 35 minutes. Remove from the oven and dot with the cheese, then return to the oven and continue baking until the cheese just melts, 1 to 2 minutes. Sprinkle with chives.

2 sweet onions, chopped
1/4 cup water, as needed
2 tablespoons packed light brown sugar
1/4 teaspoon cayenne pepper
3 cloves garlic, grated
1/4 cup balsamic vinegar
Toast, for serving
Chopped chives, for garnish

Steps:

  • Add the bacon to a skillet over medium heat. Cook the bacon until it's just starting to brown slightly and render its fat, 3 to 4 minutes. Add in the chopped onions and stir to combine. Cook, stirring occasionally, until the onions are soft and almost melting into the bacon fat, 30 to 40 minutes. If the pan starts to look dry or is browning too much, add a splash of water to deglaze.

Some of us went to a new local mini-brewery where they served bacon jam and I fell in love! I've tried a few now and this one is by far my favorite from Evil Shenanigans. Served on burgers, a panini, or just plain toast, it's over the top!

1 lb thick-cut applewood smoked bacon, cut into 1-inch pieces
1 large sweet onion, cut into 1/4-inch thick slices
3 tablespoons light brown sugar
3 garlic cloves, minced
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1 pinch fresh grated nutmeg
1 pinch ground cloves
1/2 teaspoon dry dried chipotle powder
1/4 teaspoon smoked paprika
1/2 cup strong brewed coffee
1/4 cup apple cider vinegar
1/2 cup good quality Bourbon
1/4 cup maple syrup
1 tablespoon hot sauce

Steps:

  • In a large skillet over medium heat, cook the bacon pieces until they begin to crisp at the edges buy are still soft in the center. Set aside to drain. Leave one tablespoon of the drippings in the pan.
  • Lower heat to med-low and add the onions and brown sugar. Cook until the onions are well caramelized (~20 min.). Add the garlic and spices and cook an additional five minutes.
  • Add the liquid ingredients and the bacon back to the pan. Increase the heat to medium bringing the mixture to a boil, then reduce to low and simmer for about two hours. Check the mixture every 30 minutes. If it becomes too dry, add a few tablespoons of water. You want the final mixture to be moist and very sticky.
  • Let the mixture cool slightly then put it into the bowl of a food processor and pulse about 20 times, or until it reaches your preferred consistency.
  • Store in an airtight container in the refrigerator for up to a week.

2 large eggs
2 teaspoons garlic powder
2 teaspoons onion powder

¾ cup shredded monterey jack cheese
6 oz breakfast sausage, cooked and drained
3 large eggs
kosher salt, to taste

2 scallions, thinly sliced, for garnish

Steps:

  • Preheat the oven to 500ºF (260ºC).
  • Make the crust: In a large microwave-safe bowl, microwave the hash browns on high power for 5-6 minutes, until you can separate the shredded potato pieces with your fingers but they still hold their shape.
  • Transfer the shredded potatoes to a clean dish towel set over a medium bowl. Wring the towel to squeeze any excess liquid from the potatoes.
  • Add the drained potatoes to a large bowl with the eggs, garlic powder, onion powder, salt, and oregano and stir until everything is well incorporated. The mixture should look like mashed potatoes, with a few shredded potato pieces remaining.
  • Line a 12-inch (30 cm) round pizza pan with parchment paper. Transfer the potato mixture to the pan and shape it into a crust, pressing down so that it's an even thickness with a lip around the outer edge. Brush the entire crust with olive oil.
  • Bake for 22-25 minutes, until the crust is beginning to brown and is firm to the touch. Remove from the oven.
  • Reduce the oven temperature to 325ºF (160ºC).

2 cups milk
3 tablespoons flour
3 tablespoons butter
4 ounces cream cheese
1 lb bacon
4 ounces turkey sausage
8 eggs
1 1/2 tablespoons garlic powder (1/2 tbsp for the sauce, 1/2 tbsp for the crust and 1/2 tbsp for the eggs)
1 tablespoon onion powder (1/2 for the sauce and 1/2 for the eggs)
1 tablespoon cayenne pepper (1/2 for the sauce and 1/2 for the eggs)
1 tablespoon black pepper (1/2 for the sauce and 1/2 for the eggs)
4 tablespoons olive oil
1 lb pizza dough
4 ounces monterey jack pepper cheese
4 ounces monterey jack cheese

Steps:

  • Preheat your oven to recommended pizza crust cooking temperature.
  • Shred your cheese(if you bought blocks).
  • Start cooking your bacon.
  • Now we start on the pizza sauce . Grab your butter and start melting it in a large non stick pan on medium/low heat(we don't want to burn the butter). As soon as the butter is nice and melted SLOWLY! add and whisk in the flour a little bit at a time. It should never clump up and be lumpy. It should always be smooth and bubbly.
  • Once all the flour is in the mix add your milk and spices.
  • Once the sauce is back up to boiling go ahead and add your cream cheese. Let the cream cheese just melt into the sauce while slowly stirring it. Once its blended set it on a back burner on low heat.
  • Now we make the eggs.
  • Crack all of your eggs into a bowl and add in your spices. Whisk FURIOUSLY! until they are nice and airy(only about 30 seconds of whisking for me).
  • Melt a 1/2 tbsp of butter to the bottom of a nonstick pan and add your eggs. I have a pattern to my eggs follow it if you wish. I do not stir eggs. I scrape the pan in an orderly fashion starting from the center out in both directions. Once the eggs are still a little runny I pile them in the middle of the pan and turn the heat off. They finish on their own.
  • Now that all of the main ingredients are done all that's left is putting them on your crust.
  • Take the pizza crust out and put it on a baking sheet.(I put aluminum foil down and spray it with Pam for ease of removing the pizza later).
  • Now put as much sauce as you prefer on your dough(I like my pizza SAUCY!).
  • Next add your cheese. Add roughly 3/4 of the cheese on now. Sprinkled evenly from edge to edge.
  • Next take your bacon and crumble it up and spread it evenly over the pizza.(I pull the fat off my bacon, to each his/her own).
  • Now sprinkle on your turkey sausage crumbles.
  • Now add your eggs.
  • And the last of the cheese!
  • Now take that remaining 1/2 tbsp of garlic powder and mix it with the 4 tbsp of olive oil. Add this to the "crust" of the pizza.
  • Now pop it in the oven!
