1 (10 ounce) bag baby spinach leaves
4 hard-cooked eggs, peeled and sliced
1 cup sliced mushrooms
4 strips crisply cooked bacon, crumbled
10 ounces Swiss cheese, shredded
½ cup toasted sliced almonds
1 tablespoon olive oil
1 large shallot, minced
1 teaspoon garlic, minced
⅓ cup white wine vinegar
⅓ cup Dijon mustard
⅓ cup honey
2 strips crisply cooked bacon, crumbled
salt and pepper to taste

Steps:

  • Place spinach into a large serving bowl, top with hard-cooked eggs, mushrooms, 4 crumbled strips of bacon, Swiss cheese, and almonds.

This is not your typical potato salad. This makes a lot, but it can be easily reduced. It is also just as good, if not better the next day. This will make a wet salad. If you prefer a drier potato salad increase the amount of potatoes.

1 1/2 cups mayonnaise
1/2 cup coarse grain mustard or 1/2 cup mustard, your favorite
1/4 cup cider vinegar
3 garlic cloves, minced
salt and pepper, to taste
1 lb bacon
5 lbs white potatoes, peeled if desired, cut into 3/4 inch pieces
4 stalks celery, sliced thin
6 green onions, sliced thin
1 1/2 cups red onions, chopped
9 hard-boiled eggs, peeled and chopped

Steps:

  • Whisk mayonnaise, mustard, vinegar and garlic in medium bowl to blend.
  • Season to taste with salt and pepper.
  • Cover, chill.
  • Cook bacon in large skillet until crisp.
  • Drain on paper towels.
  • Crumble.
  • Boil potatoes in large pot until just tender.
  • Drain and transfer to a large bowl.
  • Cool for 15 minutes or so.
  • Mix bacon, celery, green and red onions, eggs and dressing into potatoes.
  • Season with additional salt and pepper if needed.
  • Chill.
  • Note: I usually hold back about ¾ cup of the dressing to toss with salad just before serving.
  • While chilling the potatoes soak up a good bit of the dressing and if not careful it can become dry. If this happens just moisten with a small amount of milk and stir to encorporate.

1/2 cup mayonnaise
1/2 small onion, finely grated
1 1/2 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
1 1/2 tablespoons sugar
1 1/2 teaspoons Dijon mustard
1 lb spinach, stemmed and torn into bite-size pieces,rinsed and spun dry
12 ounces mushrooms, sliced
3 hard-boiled eggs, chilled and sliced
1/4 cup parmesan cheese, grated

Steps:

  • Cook bacon until crisp.
  • Drain on paper towels; reserve 3 tblsps drippings for dressing.
  • Crumble bacon.
  • Combine mayonnaise, onion, oil, vinegar, sugar and mustard with reserved drippings.

1 cup water
1 pinch salt
1 lb sweet potato, peeled, halved lengthwise, then cut crosswise in 1/4 inch thick slices
8 ounces green beans, ends trimmed, beans cut in half
2 teaspoons vegetable oil
8 ounces Canadian bacon, thick sliced, stacked and cut in strips
1 red onion, cut in thin wedges
1/3 cup honey Dijon salad dressing

Steps:

  • Line a serving plate with baby spinach leaves.
  • Add water and salt to skillet. Bring to a boil.
