Tips:

  • For the cornbread muffins, use fine cornmeal for a finer texture and coarse cornmeal for a more rustic texture.
  • Make sure the buttermilk is at room temperature before using it in the cornbread batter. This will help the muffins rise properly.
  • Do not overmix the cornbread batter. Overmixing can result in tough muffins.
  • For the bacon peanut butter filling, use a creamy peanut butter for a smooth filling. If you prefer a chunky filling, use a chunky peanut butter.
  • For the best results, use freshly cooked bacon in the filling. Leftover bacon can be used, but it will not be as flavorful.
  • If you do not have a muffin pan, you can bake the cornbread in a 9x13 inch baking pan. Just increase the baking time to 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Conclusion:

Bacon peanut butter cornbread muffins are a delicious and easy-to-make snack or breakfast treat. They are perfect for potlucks, picnics, or just a quick snack. With their sweet and savory flavor, these muffins are sure to be a hit with everyone who tries them.
