1 box (9 oz) frozen spinach, thawed, squeezed to drain
1 cup Original Bisquick™ mix
2 cups shredded mozzarella cheese (8 oz)
1 egg
2 teaspoons Italian seasoning
1 teaspoon garlic salt
1 cup tomato pasta sauce, if desired

Steps:

  • Heat oven to 400°F. Spray cookie sheet with cooking spray. In large bowl, mix all ingredients, except pasta sauce. Shape mixture into 1-inch balls; place on cookie sheet.
  • Bake 10 to 15 minutes or until golden brown. Immediately remove from pan. Serve with pasta sauce.

2 (10 ounce) packages frozen chopped spinach, thawed and drained
2 cups Italian-style seasoned bread crumbs
1 cup grated Parmesan cheese
½ cup butter, melted
4 small green onion, finely chopped
4 eggs, lightly beaten
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
  • Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

The ultimate cheese ball recipe made with creamy ranch flavored cream cheese, and plenty of bacon, cheese, and other tasty add-ins.

16 oz cream cheese (, room temperature)
3 Tbsp sour cream ((optional but recommended))
1 oz package ranch seasoning
3/4 tsp garlic powder
1/2 tsp dried minced onion
1/4 tsp kosher salt
1/4 tsp black pepper
1 1/4 cups cheddar cheese (, finely grated (divided))
1/2 cup pepper jack cheese (, finely grated (divided))
8 slices bacon (, cooked and crumbled (divided))
1/3 cup chopped green onions ((divided))
2/3 cup chopped pecans
1 tsp poppy seeds

Steps:

  • To a large mixing bowl, add cream cheese, sour cream (if using), ranch seasoning, garlic powder, minced onion, salt and pepper. Stir until well combined with a rubber spatula.
  • Add 1 cup of the cheddar cheese, all of the pepper jack cheese, half of the bacon, and half the green onions. Stir until mixed.
  • Lay out a large sheet of plastic wrap and drop cream cheese mixture onto it. Cover tightly on all sides, and shape into a ball shape. Refrigerate for several hours or overnight, until firm.
  • Add remaining 1/4 cup cheddar cheese, remaining bacon and green onions to a small mixing bowl. Add in poppy seeds and refrigerate alongside the cheese ball.
  • Before rolling the cheese ball, add pecans and stir well.
  • Line a rimmed baking sheet with aluminum foil and spread out the outer coating in an even layer.
  • Remove plastic wrap and roll cheese ball in coating, making sure all sides are coated. You may have to pick up some of the coating and press it so it sticks.
  • Serve immediately, or cover loosely with plastic wrap and refrigerate until ready to serve.

2 slices bacon (about 2 ounces total), cut crosswise into 1/2-inch strips
3 bunches flat-leaf spinach (about 2 pounds total), thick stems removed, well washed and dried
Coarse salt and ground pepper
2 teaspoons white-wine vinegar

Steps:

  • In a large skillet over medium heat, cook bacon until crispy, 5 to 8 minutes. With a slotted spoon, remove bacon, leaving fat in skillet; drain on a paper towel. Set aside.
  • Increase heat to high; fill skillet with as much spinach as will fit. Season with salt and pepper. Cook, tossing spinach and adding more as it wilts (it may take up to 2 minutes to fit it all). Continue to cook until tender, 1 to 3 minutes.
  • Tilt skillet to drain water from spinach (using slotted spoon or a spatula to hold spinach back). Mix in vinegar; season with salt and pepper. Serve sprinkled with crispy bacon.

6 slices bacon
6 ounces fresh spinach
1/2 teaspoon kosher salt
1/2 cup onion, finely minced
2 cloves garlic, finely minced
1 (8 ounce) block of cream cheese, softened
1/2 cup shredded cheddar jack cheese
1/4 teaspoon cayenne pepper

Steps:

  • In a large skillet cook the bacon until crisp. Set aside to cool and drain on paper towels. Chop when cool. Drain all but 1 tablespoon bacon grease from the skillet. Add the spinach and cook over medium heat until wilted and cooked through. Sprinkle the spinach with salt and set aside on a cutting board to cool. Chop finely when cooled. Add the onion to the skillet and cook until it's translucent and a tiny bit golden at the edges. Add the garlic to the skillet and cook for 1 minute. Remove from heat. Place the cream cheese in a large bowl. Add cheese, onions, garlic, half of the chopped bacon, chopped spinach, and cayenne pepper and stir well. Roll the cream cheese mixture into a large ball and then roll in the remaining chopped bacon. Wrap tightly and refrigerate until ready to serve.

2 eggs (lightly beaten)
1/2 cup grated Parmesan cheese
1/2 cup seasoned breadcrumbs
2 cloves garlic
1 square inch fresh ginger (peeled)
1 shallot (minced and lightly sauteed in butter)
1/4 lb. bacon (baked or fried crispy)

Steps:

  • Preheat oven to 350 degrees F.
  • Thaw and thoroughly drain spinach, then place in medium-size mixing bowl.
  • In small food processor, combine all ingredients except eggs and breadcrumbs.
  • Pulse process until all ingredients are completely chopped.
  • Add eggs, breadrumbs, and ingredients from food processor to spinach, stir to mix completely.
  • Using hand, from mixture into meatball-size portions, place on greased cookie sheet.

2 (8 ounce) packages cream cheese, softened
1 (4 ounce) can water chestnuts, drained and chopped
1 (.4 ounce) packet dry vegetable soup mix
2 tablespoons mayonnaise
1 cup finely shredded Cheddar cheese
½ cup chopped walnuts

Steps:

  • In a large bowl, mix together the spinach, cream cheese, water chestnuts, vegetable soup mix, mayonnaise and Cheddar cheese until well blended. Form into a ball, and roll in chopped walnuts. If the mixture is too soft to form a ball, refrigerate for about 30 minutes to set.
