1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
1/2 cup whole milk
1/2 cup mayonnaise
1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/2 bunch fresh cilantro, roughly chopped
2 tablespoons vegetable oil
1 1/2 pounds peeled and deveined shrimp, tails removed
One 6-ounce can Mexican tomato sauce or enchilada sauce

1 tablespoon butter
16 corn tortillas, warmed according to the package instructions
Pico de gallo
Avocado slices
Sour cream
Grated pepper jack cheese
Lime wedges

  • For the slaw: Combine the sliced jalapeno and shredded green and purple cabbage in a large bowl. In a separate bowl, mix the milk, mayonnaise, sugar, vinegar, cayenne and salt. Pour the milk mixture over the cabbage and jalapeno and toss to combine. (Cover and refrigerate for a couple of hours if you have the time.) Before serving, toss in the cilantro.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your shrimp tacos. Look for shrimp that are firm and have a slight briny smell. Also, use fresh vegetables and herbs for the salsa and guacamole.
  • Cook the shrimp properly: Shrimp should be cooked quickly over high heat so that they are tender and juicy. Do not overcook them, or they will become tough and rubbery.
  • Make your own tortillas: This is a great way to add an extra level of flavor and authenticity to your shrimp tacos. If you don't have time to make your own tortillas, you can use store-bought tortillas, but be sure to heat them up before serving.
  • Don't skimp on the toppings: The toppings are what really make shrimp tacos special. Be generous with the salsa, guacamole, sour cream, and cheese. You can also add other toppings, such as shredded cabbage, diced tomatoes, or pickled onions.
  • Serve the shrimp tacos immediately: Shrimp tacos are best served hot and fresh. If you are making them ahead of time, be sure to reheat them before serving.

Baja shrimp tacos are a delicious and easy-to-make meal that is perfect for a casual get-together or a weeknight dinner. With fresh, flavorful ingredients and a variety of toppings, shrimp tacos are sure to please everyone at the table.
