BAKED BEANS SUPREME (AKA GENE BROWN BEANS)
This recipe was given to my mom (who, in turn, shared it with me) by a guy named Gene Brown. So, of course, when I was a kid we used to call it Gene Brown Beans. I never met him, but evidently he was into BBQ contests and whatnot. Either way, I want to give credit where credit is due, so thanks Gene, if you're out there. This is one serious recipe! In my house, we usually serve it over rice and make a meal of it. It's fabulous.

BAKE BEAN SUPREME
This started out as my mothers three bean recipe. However, my husband and I don't like all those beans, so I adapted it into a baked bean recipe. The flavors are so good together, that you will never want beans another way. Their is a lot of leeway with the recipe. You really need to find what works for you.

Steps:
- Brown hamburger and then drain.
- Cook bacon and crumble (I use precooked bacon because I hate cooking bacon).
- Put baked beans in crockpot (drain for thicker beans, I usually drain one can and not the other).
- Chop up green pepper and add to crock pot.
- Add brown sugar (amount can vary according to taste preference).
- Add bacon and hamburger to crock pot and stir.
- Cook on low for four-six hours.
- Note: if you use high fat hamburger the beans will be runnier. I recommend using lower fat.

Steps:
- Simmer sausages in shallow boiling water to heat through, drain and wipe out, return to stove.
- While the sausages simmer, slice the bacon into 1/2-inch wide batons. Add a drizzle of olive oil to the pan and heat over medium-high heat. Thick cut the knocks on an angle and add them to the skillet and sear at the edges, remove the sausages and add the bacon and render until almost crisp but not-quite. Remove the bacon from the skillet to paper towel to cool but reserve the drippings.
- In a casserole dish, stir together the beans, garlic, and shallots and season with lots of coarse black pepper. Smooth out in the dish and wipe down the sides of the dish. Nestle the chunks of knocks into the beans, arranging them all around the casserole and allowing them to peek up and out a bit. Dot the beans with thick Worcestershire sauce. Scatter the chiles and scallions and herbs over top of the casserole. Scatter the bacon over top and using a pastry brush, dot with some of the drippings. Cover and store for a make-ahead meal.
- Preheat the oven to 375 degrees F.
- Bake the casserole in a hot oven on a baking sheet liner until the top surface is crispy in spots and bubbly all over.
- Slice the brown bread into 1-inch thick slices. On a heated griddle, melt 2 tablespoons butter and toast brown bread until slightly browned and crispy, flip the bread , and repeat.
Tips:
- Soak the beans overnight before cooking. This will help them cook faster and more evenly.
- If you don't have time to soak the beans overnight, you can quick-soak them by boiling them in water for 5 minutes, then removing them from the heat and letting them soak for 1 hour.
- Add a variety of seasonings and spices to the beans while they are cooking. This will help to give them a more flavorful taste.
- Don't overcook the beans. They should be tender but still hold their shape.
- Serve the beans with your favorite sides, such as cornbread, mashed potatoes, or rice.
Conclusion:
Baked beans are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great source of protein, fiber, and vitamins. With so many different recipes to choose from, you're sure to find one that you love. So next time you're looking for a hearty and satisfying meal, give baked beans a try.
