BAKED BEANS ALOHA
I knew these beans had to be over the top, considering the fact that my DH asked for the recipe from a co-worker, who brought them to a potluck. They are! Take the time to use fresh pineapple, that is what takes them over the top. 5/4/08: I made this recipe using crushed pineapple, in juice (one 20-ounce can and one 8-ounce can). The beans were still good, but I think I prefer the fresh to the canned. It seems a lot of the natural sugars and flavor is lost when it is processed; to me, it changed the taste. Maybe I should have used more pineapple??

Tips:
- Choose high-quality ingredients: Use canned pork and beans that are fresh and have a good expiration date. Select a can with a clear liquid and no sediment. Opt for a smoky bacon or spicy jalapeño variety for added flavor.
- Use fresh aromatics: Dice fresh onions and celery finely to add texture and flavor to the dish. Sauté them in butter or oil until softened and fragrant before adding the beans.
- Enhance the flavor with seasonings: Add a combination of brown sugar, molasses, and ketchup to create a rich and tangy sauce. Experiment with different types of mustard, such as Dijon or whole-grain, for a more complex flavor profile. A splash of Worcestershire sauce and a dash of hot sauce will add depth and heat.
- Don't overcook the beans: Simmer the beans gently over low heat until they are warmed through and the sauce has thickened. Overcooking can make the beans mushy and bland.
- Garnish and serve: Before serving, sprinkle chopped fresh parsley or cilantro on top of the beans for a pop of color and freshness. Serve the beans hot with a side of cornbread, rice, or mashed potatoes.
