MAPLE PECAN BAKED BRIE

Maple Pecan Baked Brie image

This savory-sweet appetizer is a decadent way to start your feast, but I promise there won't be a bite left over. A creamy Brie is baked to perfection and then smothered with a spicy pecan praline sauce. Be generous with the coarsely ground black pepper, as it really sends the dish over the edge!

Categories     appetizer

Time 1h5m

Yield 8 servings

Number Of Ingredients 7

1 (16-ounce) wheel of Brie
1/2 cup (1 stick) unsalted butter
2 tablespoons packed brown sugar
1/3 cup pure maple syrup
1 cup toasted and chopped pecans
1 teaspoon coarsely ground black pepper
Crackers, to serve

Steps:

  • Preheat oven to 350 degrees.
  • Shave off the top rind of the Brie (it is easiest to do this after it has been in the freezer for about 20 minutes). If the Brie came in a wooden box, return it to the original container. If not, create a makeshift "box" out of a few layers of aluminum foil, leaving the top of the Brie exposed.
  • Place the cheese on a rimmed baking sheet. Bake until warm and gooey, 15 to 20 minutes. Remove from the oven and allow to cool for 20 minutes before serving. Carefully transfer to a serving platter; you do not want the rind to puncture, if possible.
  • While the Brie is cooling, make the praline sauce. Melt the butter in a saucepan over medium heat. Add the brown sugar, maple syrup, and pecans. Cook, stirring constantly, until all of the ingredients are well combined, 3 to 5 minutes. Stir in coarsely ground black pepper and remove from heat. Allow the mixture to cool for 5 to 10 minutes, until it has thickened up just a bit. Dollop the warm sauce over the baked cheese. (There may be extra praline sauce.) Serve with assorted crackers.

ONE-BITE BAKED BRIE WITH GRAPE-PECAN COMPOTE

One-Bite Baked Brie with Grape-Pecan Compote image

Baked Brie wrapped in phyllo is a perennial party favorite because of the perfect combination of gooey-good baked cheese and crisp, buttery pastry. We've taken it modern and mini, baking the Brie in individual phyllo cups (easier than working with sheets of phyllo) and adding a compote made with toasted pecans and red grapes roasted to intensify their flavor.

Categories     appetizer

Time 50m

Yield 8 servings

Number Of Ingredients 8

2 cups small red grapes
1 tablespoon vegetable oil
1/4 cup pecans
1 tablespoon fresh lemon juice, plus 1 teaspoon lemon zest
Kosher salt
One 8-ounce wheel Brie
Two 1.9-ounce packages mini phyllo shells (about 30)
Coarsely ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Toss the grapes with the oil on a rimmed baking sheet. Bake, tossing once, until the grapes burst and are very soft, 25 to 30 minutes.
  • Meanwhile, spread the pecans out on a second rimmed baking sheet, and bake until very golden brown, 10 to 12 minutes. Let cool, then finely chop.
  • Transfer the grapes to a small shallow bowl with a slotted spoon, leaving the oil behind. Stir in the lemon juice and zest and a pinch of salt; set aside to cool completely, then stir in the toasted pecans. (The compote can be made up to a day ahead and refrigerated. Bring to room temperature before serving.)
  • Cut off just the very edges of the Brie wheel to make a rough square (it is OK if some rind remains at the corners), then cut into 30 cubes. Put a cube in each phyllo cup, and put the cups on a rimmed baking sheet. Bake until the cheese is melted, about 5 minutes.
  • Top each cup with some of the compote, and garnish with a dusting of pepper. Serve warm.

Time 10m

Yield 10 serving(s)

Number Of Ingredients 4

3/4 cup chopped pecans
1/4 cup Kahlua
3 tablespoons brown sugar
1 (14 ounce) brie cheese

Steps:

  • Microwave pecans 1 1/2 minutes.
  • Mix with Kahlua and brown sugar.
  • Spread on brie.
  • Microwave an additional 2 minutes; or bake at 350 until the topping is bubbly.
  • Serve with crackers and/or apple and pear wedges.

Tips:

  • Choose the right type of cheese. A firm, ripe cheese like Camembert or Cheddar is best for baking. Avoid soft cheeses like Fontina or Gruyère, as they will melt too easily.
  • Prepare the cheese properly. Before baking, remove the cheese from its packaging and let it come to room temperature for about 30 minutes. This will help the cheese melt evenly.
  • Use a good quality bread. A sturdy bread like a French loaf or a sourdough will help to hold up to the melted cheese.
  • Add your favorite toppings. You can add nuts, fruits, or even meats to your baked cheese. Just be sure to choose toppings that will complement the flavor of the cheese.
  • Bake the cheese until it is melted and bubbly. This will usually take about 15-20 minutes.

Conclusion:

Baked cheese is a delicious and versatile appetizer that can be served with a variety of accompaniments. Whether you are hosting a party or just looking for a quick and easy snack, baked cheese is sure to please everyone. So next time you are looking for a delicious and easy appetizer, give baked cheese a try!
