1 head cauliflower
3/4 cup panko breadcrumbs
1/4 cup parmigiano-reggiano cheese
2 large eggs, beaten
1 teaspoon dill, finely chopped
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 400 F degrees. Coat baking sheet with cooking spray.
  • Break the cauliflower into florets. Try to make pieces as uniform as possible. NOTE: tiny pieces are still okay to cook, but you may want to remove them from the oven before the larger pieces are done.
  • In a shallow bowl, beat the eggs.
  • In a second shallow bowl, blend the breadcrumbs, salt, pepper, dill, and shredded cheese.

1 large head cauliflower
½ cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
¼ cup margarine, melted
⅛ teaspoon garlic powder
⅛ teaspoon salt
1 pinch red pepper flakes
1 pinch dried oregano

Steps:

  • Clean cauliflower, and trim off leaves and any brown spots. Place the whole head of cauliflower into a steamer basket, place the basket in a large pot, and add one inch of water. Cover, and bring to a boil over medium heat. Cook for about 20 minutes or until tender.
  • Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, mix together the bread crumbs, Parmesan cheese, melted margarine. Season with garlic powder, salt, red pepper flakes, and oregano, and mix well. Place the head of cauliflower into a baking dish, and coat with the breadcrumb mixture.
  • Bake for about 10 to 15 minutes in the preheated oven, or until golden brown.

1 head cauliflower, cut into florets
1 -2 small zucchini, sliced
1 -2 clove garlic, sliced (optional)
1 cup sharp cheddar cheese, shredded
1 cup light sour cream
2/3 cup corn flakes, crushed
salt and pepper
parmesan cheese, grated for topping

Steps:

  • Preheat oven to 350F.
  • Place cauliflower in a saucepan and cover with water.
  • Bring water to a boil and cook until cauliflower is cooked but still has some crunch.
  • Drain off water and place cauliflower in a bowl.
  • Add zuccini, garlic (if using), cheddar cheese, sour cream and salt and pepper and mix well.
  • Pour into a greased baking dish and top with cornflakes and Parmesan cheese.

1 head cauliflower
2 eggs, beaten
2 tablespoons parmesan cheese, fresh grated (or Romano)
salt

Steps:

  • In a stainless steel vegetable steamer, steam the cauliflower for about 15 minutes, until tender.
  • When the vegetable is tender, remove it from the steamer, and place it in a casserole, with a cover, just large enough to hold the head. Pour the egg over the top of the cauliflower, add salt and pepper, and top with the cheese.
  • Bake, covered at 375 degrees for 10 minutes, or until the cheese has melted and the egg is cooked.

1 head cauliflower, cut into small sprigs
1 large onion, minced
1 lb ground sirloin
1 tablespoon oil
1/4 teaspoon nutmeg
salt & pepper
1 tablespoon butter
1 teaspoon oil
1 tablespoon flour
1 cup cold milk
1 cup stock
salt and pepper
1 egg, beaten

Steps:

  • Parboil cauliflower in water and salt for 4 minutes. Drain and let stand.
  • Sauté onion in 1 tbsp oil until glassy.
  • Then add ground beef, salt, pepper, and nutmeg. Cook on medium flame stirring occasionally till cooked, let stand.
  • Sauce:.
  • Melt butter and oil over low flame. Remove from flame and stir in the flour, blending thoroughly. Return to flame, and as the mixture starts to bubble, move to side of flame and add 1/3 cup of milk very gradually, stirring constantly to prevent lumps. Return to low flame and cook, stirring and increasing the sauce in small doses with stock, the remaining milk, and seasoning until it reaches the desired thickness (should me creamy thick). Remove from stove and quickly add the egg.
  • Mix 1/4 of sauces with cauliflower then in a small greased baking dish arrange half of the cauliflower. Add a layer of the meat, then the second half of the cauliflower. Top with the remaining sauce and bake for 30 minutes or when top is golden at 350°F.

1 head cauliflower, outer leaves removed
4 tablespoons margarine
1/4 cup Italian seasoned breadcrumbs
1/4 teaspoon garlic powder
1/8 teaspoon dried basil
1 pinch oregano

Steps:

  • Cut the bottom of the stem off of the head of cauliflower. Do not break apart the florets.
  • Cut an X in the bottom stem.
  • Steam the cauliflower for 10 minutes, turn over and steam for another 5 to 10 minutes, until it is fork tender.
  • Place the cauliflower in a baking dish.
  • Melt the margarine and mix in the bread crumbs, garlic powder, basil and oregano.
