2 chicken breasts
2 heads broccoli, cut into florets
4 Tbs melted butter or olive oil, divided
1 tsp garlic salt, divided
½ tsp black pepper, divided
½ tsp onion powder, divided
½ tsp paprika, divided

Steps:

  • Preheat oven to 400 degrees
  • Rub the chicken all over with 2 tablespoons of the melted butter (or olive oil if you prefer)
  • Sprinkle half the measurements of the spices all over the chicken breasts
  • Place the chicken breasts side by side in the middle of a small baking dish
  • In a small bowl, add the broccoli florets. Pour the remaining 2 tablespoons of melted butter (or olive oil) into the bowl as well
  • Add the other half of the spices. Mix until the broccoli is coated well. Set broccoli aside for now
  • Bake the chicken in the oven for 15 minutes, then (without removing the pan completely from oven) open oven doors and pour the broccoli mixture into the baking dish surrounding the chicken
  • Return to bake for another 20 minutes
  • Remove from oven and let chicken rest about 5-10 minutes before slicing

1/4 cup milk
2 tablespoons Dijon mustard
1 teaspoon dried tarragon leaves
2 1/2 cups cooked diced chicken
1 1/2 cups cooked broccoli
2 sliced green onions
8 tortillas
1 cup shredded swiss cheese

Steps:

  • Combine soup, milk, mustard and atrragon. Stir in chicken, broccoli and green onion. Spoon about 1/2 c mixture into center of each tortilla. Fold in sides and roll up. Place seam side down in a greased 12x8 or 9x13 dish.
  • Bake at 350 for 15 minutes, sprinkle with cheese and bake 10 minutes longer.

4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. 3 cups shredded cooked chicken
2 cans (4 ounces each) chopped green chiles
1 cup chicken broth
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 small onion, finely chopped
12 corn tortillas, warmed
2 cups shredded cheddar cheese
Sour cream and green onions, optional

Steps:

  • In a large bowl, combine the chicken, chiles, broth, soups and onion; set aside. Layer half of the tortillas in a greased 13x9-in. baking dish, cutting to fit pan if desired.   • Bake 15 to 20 minutes, or until sauce is bubbly, and serve with brown rice and a dollop of yogurt.
