2 tablespoons butter, melted
2 pounds fresh cod fillets
1 (4 ounce) package Boursin cheese with herbs, room temperature
1 (14.5 ounce) can diced tomatoes with garlic, onion, and peppers, drained
salt and ground black pepper to taste
2 tablespoons shredded Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour 1 tablespoon melted butter into baking dish to coat bottom. Arrange the cod fillets in the dish. Pat fillets dry using a paper towel. Spread the Boursin cheese evenly over the fillets. Pour the tomatoes over the tops. Season with salt and pepper to taste. Sprinkle with Parmesan cheese. Drizzle with remaining 1 tablespoon butter.
  • Bake, uncovered, in preheated oven for 25 minutes.

2 lbs. fresh cod fillets or 2 lb boneless, skinlessnchicken breasts
1 -4 oz pkg Boursin cheese with herbs, room temperature
1 -14.5 oz can diced tomatoes with garlic, onion and peppers, drained
Salt and ground black pepper to taste
2 T. shredded Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F. Pour the 1 T melted butter into the baking dish and coat the bottom. Pat the fillets or chicken breasts dry and arrange in bottom of dish. Steps:

  • Dip spinach leaves briefly in boiling water to blanch; drain and towel dry.
  • Pound chicken breasts evenly between 2 sheets plastic wrap to 1/4-inch thick being careful not to tear or break through the flesh. Season chicken with salt and pepper, cover with blanched spinach; spread with Boursin cheese, tuck in sides and roll up stuffed chicken as tightly as possible.
  • Refrigerate seam side down in a greased baking dish covered for at least 3 hours or overnight.

Number Of Ingredients 9

5 1/4 ounces boursin cheese
1 (10 1/2 ounce) can chicken broth
1/4 cup white wine
1/2 teaspoon black pepper
1 -2 garlic clove
1 onion
3 tablespoons olive oil
2 chicken breasts (I cubed mine)
1/2 cup grated parmesan cheese

Steps:

  • Saute onion with a Tablespoon of olive oil in skillet and cook until translucent.
  • add 1-2 more tablespoons of olive oil and add chicken breasts.
  • Cook chicken in skillet until juices run clear, or it is pretty well cooked through.
  • After chicken is browned on both sides add the can of broth and the white wine.
  • Add the pepper and garlic to the chicken and broth.
  • Bring entire skillet to a boil and add the Boursin Cheese.
  • Break up the cheese into smaller peices and reduce to a simmer.
  • Simmer about 15 mintutes until cheese is melted and creamy.
  • Add the Parmesan and serve over rice or pasta!
