CRISPIEST EVER POTATOES
Somewhere between oven-roasted potatoes and crispy hash, these little creamer potatoes are boiled in water with baking soda before being smashed. The alkaline in the baking soda helps the skins crisp up quickly. Smashing increases their surface area and contact with the pan. The result is the crunchiest-ever crust.

Steps:
- Preheat the oven to 450 degrees F.
- Add the potatoes to a large saucepan and cover with cold water by 1 inch. Add the baking soda and 1 tablespoon salt to the water. Cover, place over medium-high heat and bring to a boil. Uncover and continue to boil until the potatoes give easily when pierced with the tip of a knife, 15 to 20 minutes. Drain the potatoes and set the strainer over the top of the pan for a few minutes so the outsides of the potatoes can dry.
- Dump the potatoes onto a baking sheet. Drizzle with the oil and toss with the garlic, thyme and rosemary until the potatoes are completely coated in the oil. Sprinkle generously with salt and pepper. Using a small juice glass or glass bowl, smash each potato firmly but gently. (You want to just crack the skins and flatten slightly while keeping the potatoes mostly intact.)
- Roast until the bottoms of the potatoes are deep golden brown, 20 to 25 minutes. Remove the baking sheet from the oven and flip the potatoes using a spatula. Roast until the potatoes are golden brown and crispy on both sides, an additional 20 to 25 minutes. Transfer to a platter with a metal spatula. Serve while hot.
ROASTED BABY POTATOES
Quick and easy recipe for roasted baby potatoes. Bake them at the same time as you cook your main dish! Can also be used as a quick appetizer! These were so good you don't even need butter or salt to taste. Made the mistake of having them done before the main dish and they were almost all gone by the time dinner started!

A warm and cozy comfort food that goes great with anything, fancy or plain. Use whatever type of condensed cream soup you like. I normally use broccoli, mushroom, or chicken depending on the accompanying entree. Use any milk, but not cream or half and half.

THE BAKED POTATO

Steps:
- Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
- Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.
CRISPY ROASTED POTATOES
Steps:
- Preheat the oven to 425 degrees F. Place 2 stacked rimmed baking sheets in the oven and let them heat with the oven (stacking them helps the pans hold the heat).
- Toss the potatoes with the oil and 1 teaspoon garlic salt in a bowl. Remove the heated pans from the oven and arrange the potatoes in an even layer, cut-side down, in the top pan. Return the pans to the oven and bake for 15 minutes, then flip the potatoes and bake until both sides are toasted and brown, another 15 minutes.
- Meanwhile, add the mayo, chives, dill, parsley and remaining 1/2 teaspoon garlic salt to a food processor and pulse until chunky.
- Smear the aioli on the bottom of a serving platter. Pile the potatoes on top of the aioli. Drizzle with more olive oil and season with salt and pepper.
Tips:
- To achieve a crispy exterior and tender interior, select medium-sized potatoes with smooth, unblemished skin.
- Scrub the potatoes thoroughly to remove any dirt or debris. Avoid peeling them, as the skin adds flavor and nutrients.
- Use a sharp knife to cut the potatoes into uniform-sized wedges or cubes to ensure even cooking.
- Soak the potato wedges or cubes in cold water for at least 30 minutes to remove excess starch and help them crisp up during baking.
- Pat the potato wedges or cubes dry with paper towels before tossing them with oil and seasonings. This will prevent the potatoes from steaming instead of roasting.
- Use a generous amount of olive oil or melted butter to coat the potatoes evenly. This will help them brown and crisp up in the oven.
- Season the potatoes liberally with salt, pepper, and any other desired herbs or spices. Garlic powder, paprika, thyme, and rosemary are popular choices.
- Spread the potatoes in a single layer on a baking sheet to ensure they cook evenly and get crispy on all sides.
- Preheat the oven to the desired temperature before adding the potatoes. This will help them start cooking immediately and prevent them from steaming.
- Roast the potatoes for the recommended time, stirring or shaking the baking sheet occasionally to ensure even cooking.
- Keep an eye on the potatoes towards the end of the cooking time to prevent burning. They should be tender on the inside and golden brown on the outside.
Conclusion:
Crispy and flavorful baked creamer potatoes are an easy and versatile side dish that can complement various main courses. Experiment with different seasonings and herbs to create unique flavor combinations. Whether you prefer classic salt and pepper or something more adventurous like garlic and rosemary, baked creamer potatoes are a delicious and satisfying addition to any meal. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven or microwave until warmed through before serving.
