3 tablespoons vegetable oil
2 medium red onions, finely chopped
1 1/2 teaspoons coriander, ground
1/2 teaspoon cayenne
1 red bell pepper, diced

4 tomatoes, peeled seeded and diced
6 tablespoons lime juice
1/2 teaspoon salt

1/2 cup dry white wine
1/2 cup pitted Kalamata olives, sliced in half
4 cloves garlic, minced

1/2 teaspoon Italian seasoning

  • Preheat the oven to 425 degrees F. Combine the cherry tomatoes, white wine, olives, 3 of the garlic cloves, capers, honey, 1/2 teaspoon salt and a few grinds of pepper in a 9-by-13-inch baking dish.
  • Pat the haddock fillets dry with a paper towel and season the flesh side with the Italian seasoning, paprika, 1 teaspoon salt and a few grinds of pepper.   • Heat 1 tbsp oil in a frying pan and cook the onion and two-thirds of the garlic for 2-3 minutes, or until the onion is soft.
  • Add the chopped tomatoes, olives, tomato puree and 1 tsp oregano. Bring to the boil and simmer, covered, for 10-15 minutes, or until the sauce begins to thicken. Season with salt and pepper.

3 cloves garlic, minced
1 (16 ounce) jar pasta sauce
1 pound haddock fillets
