1 tsp garlic salt
1 dash(es) freshly ground pepper
3 1/2 lb whole chicken, quartered
6 Tbsp butter
1/4 c honey
3 Tbsp lemon juice
2 Tbsp soy sauce
1 dash(es) ground ginger

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Mix flour, garlic salt, and pepper, then coat chicken quarters thoroughly.
  • 3. Put 2 tablespoons of the butter in a shallow baking dish just large enough to hold the chicken in a single layer; put dish in oven to melt butter while oven preheats.
  • 4. Arrange chicken, skin side down, in melted butter. Bake, uncovered, 30 minutes.
  • 5. Meanwhile, melt remaining 4 tablespoons butter with honey, lemon juice, soy sauce, and ginger. After 30 minutes remove chicken from oven, turn skin side up, and cover with butter mixture. Continue baking, brushing occasionally with butter-honey sauce, until chicken is tender and richly browned (30 to 40 minutes more).
  • 6. Serve immediately.

Tips:

  • Use a whole chicken for a more flavorful and juicy dish.
  • Make sure the chicken is completely thawed before cooking.
  • Pat the chicken dry before seasoning and cooking to help the skin crisp up.
  • Season the chicken generously with salt and pepper, both inside and out.
  • Use a combination of melted butter and honey to glaze the chicken.
  • If you don't have a roasting pan, you can use a large baking dish.
  • Roast the chicken in a preheated oven at 375 degrees Fahrenheit for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest for 10 minutes before carving.
