Put the drumsticks in a large bowl and toss to coat with 1 tablespoon water. Place the drumsticks in the bag with the breadcrumbs and shake well to coat, pressing the breadcrumbs firmly into the meat. Arrange the drumsticks in a circle on a 9-inch pie dish with the tips facing out (they may rest on the rim of the dish). Bake until the breadcrumbs are dark golden and the internal temperature registers 165 degrees F on an instant-read thermometer (avoid touching bone), 30 to 35 minutes.
- Divide the sauce evenly over the drumsticks. Sprinkle the Parmesan over the top and lay 1 slice of mozzarella on top of each drumstick. Return the drumsticks to the oven and cook until the cheese is melted and bubbly, about 10 minutes. Serve.
BAKED PARMESAN CHICKEN DRUMSTICKS

- Heat oven to 375 F.
- Grease a 9 x 13-inch baking dish or spray with cooking spray.
- Combine butter and lemon juice; brush chicken pieces all over. Sprinkle with the seasonings.
- Combine bread crumbs and Parmesan cheese in a shallow dish; coat the chicken pieces thoroughly. Arrange chicken pieces in the baking dish and sprinkle with the remaining crumbs; drizzle with any remaining butter mixture.

- In a large bowl, mix together the salt, pepper, Italian seasoning, and cumin. Pour chicken wings into the bowl and coat with the spice mixture.
- Transfer wings on to a baking sheet, bake for 20 minutes. Then increase the oven temperature to 425ºF (220°C) bake for 15 more minutes.

I always have a bag of frozen wings in the freezer for last minute guests and this recipe is great for using them, since no thawing is required.

- Combine first 6 ingredients (cheese through pepper).
- Set the melted butter in a bowl and dip the chicken wing pieces first into the butter, then into the cheese mixture to coat.

- Remove skin from drumsticks.
- In a large plastic bag (or deep bowl) shake/mix together bread crumbs, parmesan, sesame seeds, salt, pepper, cayenne and onion powder.
