1/2 cup chopped walnuts, toasted
1/2 cup raspberry preserves
2/3 cup sweetened dried cranberries
1 (17 1/4-ounce) package frozen puff pastry (2) sheets, thawed
1 (8-ounce) 4 1/4-inch diameter round Brie cheese
1 tablespoon milk
1 tablespoon water
1 large Land O Lakes® Egg
Apple slices, if desired
Crackers, if desired

Steps:

  • Heat oven to 400°F. Grease 15x10x1-inch baking pan; set aside.
  • Combine walnuts, preserves and cranberries in bowl; set aside.
  • Place 1 pastry sheet on lightly floured surface; top with second sheet. Roll out to 13-inch square. Cut to 13-inch circle. Place pastry circle onto prepared pan.
  • Remove center of Brie cheese, using small sharp knife, in as large a piece as possible, leaving 1/4-inch shell around outside edge and bottom. Set center of cheese aside.
  • Evenly press walnut-cranberry mixture into shell. Gently place Brie cheese center on top of walnut-cranberry mixture. (Do not push down or edges may crack.) Place filled Brie cheese in center of pastry circle. Gather pastry up around Brie, holding firmly at top; pinch edges of pastry to seal. Check for holes in pastry, patching with extra pastry, if needed. Decorate top with star-shaped pastry cut-outs, if desired.
  • Whisk milk, water and egg together in bowl; brush over pastry. Bake 38-42 minutes or until medium golden brown. (Brie may leak when baking.) Let stand 15 minutes to allow Brie to set.

1 small wheel of brie (about 6 to 8 inches), chilled
¼ cup dried cranberries
¼ cup chopped walnuts
1 sheet frozen puff pastry, thawed, plus extra for (optional) design
1 egg, beaten with
1 teaspoon water

Steps:

  • Score the side of a wheel of brie all the way around with a sharp paring knife. Cut directly on the "equator" through the rind. Using a long piece of string or dental floss, wrap the string around the brie on the newly made cut. Loop one end of the string over the other (a half knot). Then pulling the ends of the string in opposite directions, cut the brie in half.
  • Press the dried cranberries on one cut side of the brie, and the walnuts on the other. Quickly put the 2 sides back together with the cranberries on top of the walnuts. Press together and stuff back in any cranberries or walnuts that fell out.
  • Roll out a thawed sheet of puff pastry on a floured surface to about 1/8-inch thickness. Place brie in center of pastry. This is ideal for parties etc and is fairly simple to make. It can be prepared in advance and then baked when needed. I use the cranberry orange sauce from Recipe #274069 which is very easy or you can buy it ready made. For the pastry i use all shortening since it gives a more flaky pastry, if you like a more flavorful pastry you can use half butter.

1 -2 tablespoon cranberry sauce
1 1/2 ounces walnuts
7 2/3 ounces brie round
4 ounces all-purpose flour
4 ounces shortening
1/4 teaspoon salt
ice water

Steps:

  • Pastry: Try to keep all ingredients as cold as possible, rub the fats into the flour and salt. until you get a bread crumb consistency.
  • Add just enough iced water to make a dough that comes clean away from the bowl.
  • Roll out on a floured surface to a narrow strip.
  • Fold in three, give a quarter turn so one of the open ends is towards you and roll out again. Repeat three times.
  • Cover pastry and leave to rest in fridge 20-30 minutes. Take care to roll away from you and do not break the air bubbles that will rise.
