ARBORIO RICE PUDDING

Arborio Rice Pudding image

Arborio is the stuff that risotto is made of. Its fat, starchy grain makes for silky, rich delicious rice dishes, even for dessert. One of my favorite desserts of all time is rice pudding. The silky richness from the arborio sends it over the top.

Time 40m

Yield 4 servings

Number Of Ingredients 9

1 cup water
Pinch salt
1/2 tablespoon butter
1/2 cup Arborio rice
2 cups whole milk
4 tablespoons sugar
1 teaspoon vanilla extract
Few dashes ground cinnamon
Whipped cream, for serving

Steps:

  • Bring water, salt, and butter to a boil in a medium saucepan. Add the rice, return to a boil, and then reduce the heat to the lowest setting. Shake the pan occasionally and cook until rice has absorbed the water but it still al dente, about 15 minutes.
  • Bring milk, sugar, vanilla, and a few dashes of cinnamon to a simmer in a separate saucepan. Add the cooked rice and cook at a simmer over medium-low heat until rice absorbs most of the milk and mixture starts to get thick and silky, about 10 to 15 minutes.
  • Transfer pudding to a large bowl and cool to room temperature. Place in refrigerator until cool and set. Serve with whipped cream and a dash more cinnamon.

  • To speed the oven cooking time up, you can bring to a simmer on top of the stove if desired over medium heat.
  • Cover with a lid and place in the oven to bake for about 2 hours (could take more or less time) stirring a couple of times while cooking.
  • Add in raisins the last 30 minutes of cooking.

SIMPLE BREAD PUDDING

Simple Bread Pudding image

This recipe is proof-positive that leftover bread can easily be converted to dessert without much work. There's room for customization here: consider adding fresh or dried fruit or a combination of spices like cinnamon, nutmeg, allspice and cardamom. It makes a great brunch dish, served with fresh fruit compote. Or add a handful of chocolate chips before baking for a decidedly more decadent outcome.

Time 1h45m

Yield Serves 8

Number Of Ingredients 22

Vegetable oil for greasing pan
1/2 cup sugar
1/2 cup pistachios
1/2 large loaf of challah bread, cut into 1-inch dice (about 5 cups)
6 tablespoons unsalted butter, plus more for greasing
2 tablespoons toasted pine nuts
1/2 stick cinnamon
Several threads of saffron
1 teaspoon ground nutmeg
1 teaspoon mastic crystals (optional)
1 teaspoon grains of paradise
1/4 teaspoon sea salt
6 cups half-and-half, plus more for serving
1/4 cup candied citron peel
1 bay leaf
Kosher salt
1 cup carnaroli rice
3 tablespoons sugar
1/2 vanilla bean, seeds scraped
2 tablespoons dried currants, soaked in warm water
8 sun-dried tomatoes, soaked in warm water
1 cup fresh ricotta

Steps:

  • For the pistachio praline: Oil a baking sheet. In a small saucepan over medium-high heat, cook the sugar; swirl the pan as it begins to brown. When dark caramel, remove from the heat and stir in the pistachios. Spread on the baking sheet. Cool completely, then chop finely.
  • For the pudding: Grind the challah in a food processor. Add 3 tablespoons butter and pulse until mixed. In a mini processor, grind the pine nuts, then blend with 3 tablespoons butter. Using a spice grinder, grind the cinnamon, saffron, nutmeg, mastic, grains of paradise and sea salt. In a small pan, heat 1 cup half-and-half with finely chopped citron peel and bay leaf until steaming.
  • In a large pot, bring 2 quarts water and 1 tablespoon salt to a boil and add the rice. Blanch for 1 minute, then drain. Pour 5 cups half-and-half in a saucepan over medium heat until just steaming. Stir in 3 tablespoons sugar, the vanilla bean and seeds and the ground spices. Add the rice and simmer uncovered on low heat until the rice is al dente, 45 to 60 minutes. Drain well and discard the vanilla bean.
  • Butter a 3-inch-deep, 4-quart casserole. Drain the currants. Drain and coarsely chop the tomatoes. Spread half the rice in the casserole, then spread the ricotta and sprinkle with the currants, tomatoes and pine nuts. Spread with the remaining rice. Discard the bay leaf from the citron-peel infusion and pour over the rice. Cover with bread crumbs, then the praline. Bake until the topping is crisp, 15 to 20 minutes. If desired, gently fold in half-and-half when serving.

OVEN BAKED SWEET AND SAVORY BROWN RICE

Oven Baked Sweet and Savory Brown Rice image

Categories     side-dish

Time 1h

Yield 8 servings

Number Of Ingredients 9

2 cups brown rice
6 cups vegetable stock
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1/2 cup brown sugar
1 tablespoon minced fresh ginger
1 cup pitted and chopped fresh dates

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the brown rice, vegetable stock, cinnamon, nutmeg, salt, pepper, brown sugar, ginger and dates to a metal baking pan and mix with your hands to make sure all of the ingredients are distributed evenly. Cover with aluminum foil and bake for 45 minutes to 1 hour. Remove the pan from the oven, transfer the rice to a serving bowl and serve.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the pudding will taste. Look for flavorful, fresh fruits and vegetables, and use high-quality rice and dairy products.
  • Cook the rice properly: The rice should be cooked until it is tender but still has a slight bite to it. If the rice is overcooked, it will become mushy and the pudding will be too soft.
  • Don't overmix the pudding: Once the eggs and milk are added to the rice, stir just until the ingredients are combined. Overmixing will make the pudding tough.
  • Bake the pudding in a water bath: This will help to prevent the pudding from curdling and will also help it to cook evenly.
  • Let the pudding cool completely before serving: This will allow the flavors to meld and the pudding to set properly.

Conclusion:

Baked sweet and savory carnaroli rice pudding is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. With its creamy texture, rich flavor, and endless variations, this pudding is sure to please everyone at your table. So next time you're looking for a new and exciting way to enjoy rice, give this recipe a try!
